Mac-n-Cheese
Posted under entrees on December 30, 2007
And now, time for something easy. After making far too many desserts during the holidays, I thought it might be good to share a recipe for a quick meal. Children and adults alike enjoy this simple, yet decadently rich pasta dish.
Mac-n-Cheese
1 box papadini rotini lentil bean pasta
2 cups grated cheddar cheese
2 tablespoons butter

Many Hands Make Gingerbread
Posted under desserts on December 23, 2007
The other day we had friends over and made tons of gingerbread men. So many little hands rolling and cutting out dough. We decorated our gingerbread men with dried fruit and nuts. The kids even cut loose and made free form cookie shapes as well.
Gingerbread Men
5 cups blanched almond flour
1 tablespoon cinnamon
1 tablespoon ginger powder
¼ [...]
Chocolate Bark
Posted under desserts on December 16, 2007
Perfect for holiday parties and potlucks, this chocolate bark is a favorite of mine. It’s another gluten-free, dairy-free, vegan dessert that doesn’t taste it. And for those with no food restrictions whatsoever? Who can say no to candy, let alone chocolate? See for yourself, try some.
Chocolate Bark
3 tablespoons grapeseed oil
6 tablespoons agave nectar
2 cups [...]

Stocking Your Kitchen: Pots and Pans
Posted under products on December 9, 2007
With more time in the kitchen during the holidays, several people have asked me about cookware, specifically, pots and pans.
As you read through the list of items below, keep in mind that stocking your kitchen need not be an overnight process. You can invest slowly and build your own “dream team” set of pots and [...]
Butternut Squash Latkes
Posted under cooked veggies on December 3, 2007
Hanukkah is a day away and that means only one thing: fried food! Lots of it. Yum. I confess, though it may not be the healthiest thing, I love a good crispy latke, or just about anything fried for that matter.
Below is my favorite recipe for latkes. I have been making these gluten-free latkes [...]
Homemade Applesauce
Posted under condiments, desserts on December 2, 2007
I love the season of late fall, just before the winter solstice. The days get super short –well, I don’t love that. Nevertheless, I enjoy the chill in the air and seeing the mountains covered in snow.
For me, cold weather is merely a great excuse to stay home and bake, and this time of year, [...]
Kale with Gomasio
Posted under cooked veggies on November 29, 2007
I’ve been laying low since Thanksgiving, cleaning my house with abandon, giving away everything the boys and I don’t use. That said, in between sorting stuff and testing desserts for the upcoming holidays, I’ve been relying on some staple seasonal vegetable dishes to take me through the dark season.
This is an easy, family favorite. Just [...]
Thanksgiving
Posted under condiments, cooked veggies, desserts, entrees on November 21, 2007
Thanksgiving. I find it challenging to write the word without giving some sort of gratitude. Each year, before we partake in our Thanksgiving feast, we go around the table and take the time to say a few words of gratitude, stating our thanks for things such a the food at the table, good friends and [...]
Chocolate Cream Pie
Posted under desserts on November 21, 2007
Justine, my new pen pal in San Francisco, recently went gluten-free. We have been corresponding about her quest to find a good gluten-free pie crust for the holidays. I have had much fun chatting with Justine via email, enjoying her determination and attention to detail. Justine, here is my take on a flaky gluten-free crust. [...]
Squash “Pie”
Posted under cooked veggies on November 21, 2007
This dish is really more of a soufflé, though in my house it has come to be known as the cherished “Squash Pie.” This morning my dear friend Amado called looking for this recipe for his Thanksgiving feast.
Squash Pie
2 medium butternut squash, cut in half, seeded
3 tablespoons butter or grapeseed oil
2 eggs
1 tablespoon vanilla [...]
Chestnuts with Brussel Sprouts
Posted under cooked veggies on November 20, 2007
In the process of creating this recipe I cooked chestnuts in a variety of ways. I report here: do not bother with the boiling method. This manner of preparation entails the painstaking prying of many little nuts from their shells. During that process I felt like a squirrel –with a knife.
My favorite way, providing both [...]
Squash with Cherries
Posted under cooked veggies on November 20, 2007
This is one of my fall favorites. I started making it years ago when we lived in New York. This dish showcases squash as great comfort food for the whole family.
Squash with Cherries
1 large butternut squash, peeled, cut into one inch cubes
½ cup dried cherries
3 vanilla beans
3 cinnamon sticks
10 slivers lemon peel
1 cup [...]
Gravy
Posted under condiments on November 19, 2007
During this time of year I make gravy on a weekly basis. When the cold, damp weather sets in, rich, warm, gravy makes for a delicious comfort food smothered over roasted chicken or turkey.
Gravy
4 cups chicken stock
poultry gizzards (optional)
2 medium onions
2 cloves garlic
pan drippings
1 tablespoon kudzu
½ teaspoon celtic sea salt
In a medium saucepan bring [...]
Balsamic Roasted Turkey with Apple Stuffing
Posted under entrees on November 18, 2007
This week, I have been testing the Thanksgiving menu that I shared with those of you signed up for my newsletter. We had almost a full Thanksgiving dinner last Wednesday and leftovers Thursday and Friday. Needless to say, my husband was not too thrilled with eating turkey 3 nights in a row just a week [...]
Pumpkin Cranberry Upside-Down Cake
Posted under desserts on November 12, 2007
It all started a few weeks ago when my son’s viola teacher, Sandra, asked for advice regarding traditional Thanksgiving family fare.
The next thing I knew, she had given me a copy of a recipe for Pumpkin Cranberry Upside-Down Cake featured in Sunset Magazine’s November 2007 issue. I made several changes to it, most notably removing [...]
Rosemary Apple Chicken
Posted under entrees on November 4, 2007
Every Friday night, I roast a chicken. My children are willing to consume any chicken dish as long as it contains fruit. Such is our unspoken agreement.
This past week, I used apples to lure my children to their protein dish. The combination of rosemary with apples was a natural pairing and the balsamic vinegar, [...]
Baked Apples
Posted under desserts on October 28, 2007
To me, fall means baked apples. Simple. Delicious. Sweet. Warm. Comfort.
The other day, my older son asked if we could partake in our favorite fall ritual and bake up some apples. I was busy with a bunch of other cooking projects so he took matters into his own hands, cored a couple of apples, stuffed [...]
Lee’s Banana Birthday Cake
Posted under desserts on October 21, 2007
Banana bread. Banana cake. What’s the difference?
Last night we went out with our friends Debbie and Mike. They are quite the non-profit duo. Debbie founded the timely and super innovative Wellness Initiative, while Mike runs Progress Now. Two cutting edge organizations out to make the world a better place. What could [...]

Dates are as as sweet as candy, so of course, children like these treats. Adults enjoy the delicate blend of flavors. See for yourself, this dessert of Middle Eastern origin is quite tasty.

Soothing Chai
Posted under beverages on October 7, 2007
Today was the first day since June that I did not wear my flip flops. That means only one thing: the cold weather is here.
Although yesterday was warm and sunny, today we will dip down to a low of 35 degrees! For me, this chilly weather calls for one of my favorite beverages: homemade [...]
Got Milk?
Posted under beverages on September 30, 2007
Almond milk is one of my favorite drinks. Rich and creamy, it’s easy to make and super nourishing. While almond milk is a good alternative beverage for those on a dairy-free kick or raw food plan, I think it’s just plain delicious, whatever your dietary predilection! My children drink it by the glassful, while I [...]
Peach Chicken
Posted under entrees on September 23, 2007
Fall is a full time of year; especially for a Jewish family with children in a Waldorf school. Last week we celebrated Rosh Hashannah (Jewish New Year), yesterday was Yom Kippur (Day of Atonement) and this coming Friday is Succot, the fall harvest festival celebrating the bounty provided to the Jews during 40 years [...]
Granola
Posted under breakfasts, snacks on September 11, 2007
I love granola; sweet and crunchy, it always satisfies a good snack attack.
I also get a kick out of using the term “granola” to ridicule my Boulder brethren. However, when I’m feeling earthy, dousing myself in patchouli (which my husband dislikes to no end) I can easily apply the term to myself –even though I’m [...]
Chicken Salad with Almonds
Posted under entrees, salads on August 29, 2007
Even though the days of August are long and hot, the month seems to speed by every year, and this year has been no different.
Today the boys started school and my older son had his first viola lesson. He locked the viola case to keep his little brother out. When we arrived at the lesson, [...]
The Joy of Food
Posted under celiac, health on August 15, 2007
Up until now, I have kept my posts short and (mostly) impersonal. Today I want to do something different. I am going to explain a few main components of my diet.
Yes, I do have celiac disease. And yes, I am gluten-free. However, I consider my diet to be far beyond gluten-free. I do not eat [...]
City Survey
Posted under activism on August 9, 2007
A debate is brewing here in Boulder about a survey that the City Council wants to send out to 3,500 citizens. The cost of the survey would be $100,000 and the results would come in just before at least 4 (though possibly 7) of our 9 incumbent council members vacate their seats.
Below is a letter [...]
Turning Lemons into Lemonade
Posted under beverages on August 7, 2007
I have been guzzling gallons of my favorite summer beverage during this hot spell. It’s another easy one,
and better yet, has no sugar or artificial sweeteners.
How’s that possible? See for yourself…
Lemonade
2 quarts water
¼ cup lemon juice (fresh squeezed)
4 dropper-fulls stevia
Fill a 2 quart mason jar with water, almost to the top, leaving [...]
Salmon with Anchovy Olive Tapenade
Posted under entrees on July 31, 2007
I love to eat salmon. Actually, I love the idea of eating salmon. All those good omega 3’s. Lately, I’ve been on a quest to create salmon toppings that disguise the fishy flavor. Here’s one that worked well.
Salmon with Anchovy Olive Tapenade
4 (4) ounce fillets wild salmon
¼ cup lemon juice, freshly squeezed.
1 tablespoon salted anchovies, [...]
