Yesterday was the last day of school for the boys and their friends and we all celebrated on our porch with these fun and festive cupcakes. Super easy to make and even easier to eat, the boys made a big mess –their faces were covered in yummy deliciousness in the mid day heat. Then they ran around to our back yard, turned on the sprinkler and jumped on our trampoline. What a great afternoon!

I thought these gluten free Peanut Butter Chocolate Chip Cupcakes would be a breeze to make. I was wrong. A dozen batches later, here is the recipe.
Peanut Butter Chocolate Chip Cupcakes
½ cup creamy peanut butter (unsalted)
½ cup agave nectar
¼ teaspoon celtic sea salt
¼ teaspoon baking soda
½ cup roasted peanuts (unsalted), chopped
½ cup chocolate chunks
In a large bowl, with a hand blender, mix peanut butter, agave and eggs until creamy

The idea to make these gluten free Blueberries and Cream Cupcakes came from the book Martha Stewart’s Cupcakes. You can view her original recipe over at ivillage.com. While testing, the boys and I were referring to these yummy little gluten free treats as blueberry shortcake cupcakes and as you can imagine, the 3 of us enjoyed every bite.

I’ve been wanting to make gluten free Carrot Cupcakes for a while now. When I think of spring, I think of carrot cake and when I think of picnics and potlucks I think of carrot cake cupcake yumminess.

Here’s a quick and easy dessert that will wow your guests whether they’re gluten free or “full of gluten”. This Flourless Chocolate Cupcake recipe is dark and rich –my husband absolutely loved it.

This gluten free Whipped Cream Frosting is fun to make and so easy that the children can practically do it by themselves. I like to spread it over my Banana Cream Pie Cupcakes, though it goes equally well with Chocolate Cupcakes.
Whipped Cream Frosting
1 cup heavy cream
2 tablespoons agave nectar
Place the cream and agave in a large (and if possible deep) bowl
Whip with a hand blender until stiff peaks form
Spread over cupcakes or cake
Frosts about 8 cupcakes

This chocolate “dirt” is perfect for dusting cakes and cupcakes. It’s made from one simple ingredient –chocolate chunks and super easy to prepare.
I recently used this dirt to dust the Whipped Cream Frosting on my Banana Cream Pie Cupcakes.
1 handful chocolate chunks
Place chips in a coffee grinder
Grind until the texture of coarse sand
Serve over cream, berries or cupcakes

This sweet, rich yet tart and tangy Key Lime Icing is a cinch to make and has great flavor. I like to pair it with my gluten free Coconut Cupcakes to make Coconut Key Lime Cupcakes.
Key Lime Icing
1 pint heavy cream
½ cup agave nectar or honey
¼ cup lime zest (I use a microplane zester) (3-4 limes)
