Let us now praise all things pumpkin. I’m kinda obsessed with gluten free, dairy free pumpkin dishes right now, hence the vegan Pumpkin Ice Cream here, and the Pumpkin Bars earlier this week. And let us not forget the Pumpkin Pie Muffins of last year either.
This pumpkin pie ice cream is a delicious fall treat whether served at Halloween or Thanksgiving. For more information on pumpkin mania, check out this funny article from Esquire called Some Pumpkin Flavoring Best Avoided ... read more →

In honor of fall, I spent several days last week in a pumpkin “trance,” experimenting with various iterations of gluten free baked goods containing pumpkin.
At first, I had terrible failures. Suffice it to say that my pumpkin cookies and pumpkin scones while edible, were not at all blog worthy. Next, I decided to make pumpkin loaves –while they didn’t look too pretty, they were delicious. Finally, I made these gluten free pumpkin bars, which my 10 year old declared “addictive.” Every day last ... read more →

Looking for Halloween treats that won’t make your little ghosts and goblins frown? So am I. Hence, I’ve composed the lists below of gluten-free goodies.
This year, I’ve purchased organic (gluten-free) milk chocolate squares to hand out to the trick-or-treaters. My children and I had a funny conversation about this at Whole Foods the other day while we were grocery shopping. When they asked what we would be passing out for Halloween this year. I told them, “organic milk chocolate.”
Their response? ... read more →

My boys love these carrot fries hot out of the oven. I like baking them as it eliminates the messy splattering that results from the typical preparation of French fries –frying.
Speaking of messes, I feel like I’m cleaning up a lot of them these days. Writing a book this summer really threw me for a loop. First, I wasn’t entirely planning on it. Second, I spent just about every waking (and too many that should have been sleeping) moment(s) on ... read more →

Today I’m giving away a brand new Chili Red Classic Teakettle from Chantal. I have an exact “replica” of this tea kettle in my kitchen; it is gorgeous and functional, adding a bright spot of color to my favorite room in the house.
We use it throughout the day and well into the night for boiling up water for tea, and it gets the job done. I’ve had my kettle for over a decade and don’t plan on trading it in ... read more →

Oven Roasted Broccoli is a quick, easy and super healthy dish for your entire family.
I returned home from Blogher Food 2010 yesterday and found that the seasons had changed during the mere 4 days I was out of town. It now seems to actually be fall here in Boulder, which means it is the perfect weather for roasting vegetables.
My boys inhale this naturally gluten free roasted broccoli dish whenever I make it. Their friend Josh has been known to eat ... read more →

This dark green, luscious shake is my go to drink when I need a little protein pick me up.
To me, the flavor of the kale is not that pronounced, what comes through is the creamy richness of the protein powder with the tart sweetness of the orange, thereby forming a yummy gluten-free, dairy-free creamsicle experience in a glass. Enjoy!
1 cup kale, chopped
1 whole orange, peeled and chopped
¼ cup water
1 scoop Frank Zane Egg White Protein Powder (or protein ... read more →

It’s been a busy summer, with baseball, boys and everything else that goes on around here. Now that it’s the “harvest,” it’s the perfect time to announce what I grew over the summer. I cultivated a new book called:

Spunky Coconut’s Chicken Meatballs!
This giveaway is now closed.
This recipe comes from The Spunky Coconut Cookbook by my adorable friend, Kelly Brozyna of the spunkycoconut.com.
Last weekend, between all of my writing deadlines, I snuck out of the house, away from the computer to meet up with Kelly and her family at the Boulder Farmer’s Market. We grabbed some grub from the market, splashed around with her gorgeous daughters in the creek, then walked around downtown together for a while.
How refreshing! I ... read more →
