These peanut butter cookies are gluten free, grain free and vegan to boot. I based them on Heidi’s Peanut Butter Cookie recipe over at 101 Cookbooks, one of my favorite websites. Though I did cut the amount of sweetener in half and make a couple of other changes.

I discovered this hot cereal on Ricki Heller’s blog, Diet Dessert and Dogs, after she tweeted it a couple of days ago. I’ve had it for my gluten free breakfast every day since! Is soda the new tobacco? That is what I was wondering after I read Mark Bittman’s op-ed piece (Bad Food? Tax It) in yesterday’s New York Times. In his article (which I tweeted several times) Bittman suggested taxing soda and subsidizing vegetables. Not such a bad idea, right?

Last night I had a hunkering for gluten free peanut butter cookies. I went over to Elise’s site, Simply Recipes, and found a yummy looking recipe for gluten-filled Peanut Butter Cookies. I experimented a bit, made a couple of changes to her recipe and came up with a nice gluten free cookie dough. These healthy and simple energy bars are packed with energy.
Apricot Power Bars are a great grab and go breakfast or the perfect pick me up on the way home from the gym. Kid-friendly (with white chocolate) and Paleo-friendly (with dark chocolate, or no chocolate at all) I’ve made these gluten free bars each and every way.

I love a good cool, yet spicy drink in the summer. This Iced Ginger Chai recipe is based on one of my favorite products, Bhakti Chai. It’s heavy on the ginger, cardamom and black pepper which I love.

This Coconut Chocolate Chip Ice Cream is the perfect refreshment for a hot summer day. Since every child in the neighborhood seems to be at my house at present, bouncing on our trampoline, it is going to make the perfect afternoon snack in a few short minutes.
It’s fun (and super easy) to make dairy free ice cream from coconut milk. Low in sugar, and high in protein and good fat, I feel great about feeding it to the gang.
