It’s that time of year again –Purim. Which means time for Nut Free Chocolate Hamantaschen. This year because so many of you requested it on my Facebook page, I’ve developed Hamantaschen that are not only gluten and grain-free, they are nut-free as well.
Making gluten-free cookies without grains, nuts, butter, and sugar took quite some time to perfect. While I typically use almond flour to make cookies here, I use coconut flour –a very dense flour that is highly absorbent and soaks up tons of liquid and fat. In my experience, coconut flour yields fantastic muffins, cakes, and baked goods. This is the first time that I have developed a gluten-free cookie recipe using coconut flour.

My mother-in-law (aka Grandma Marylyn) is obsessed with all things crispy, crunchy, and Paleo. Like me, she has celiac disease and has followed a strict gluten-free diet for years. I created this Crispy Chocolate Chip Cookie recipe just for her. Grandma Marylyn is a huge fan of my Cranberry Chocolate Biscotti, as well as my Chocolate Orange Scones, and presents me with freshly made batches of each of these every time we have a visit.
Grandma has been asking me for years to develop a thin and crispy cookie recipe. She has no idea that I’ve created these Paleo chocolate chip cookies for her!

Raspberry Thumbprint Cookies are fabulous for any special occasion or holiday, though especially at Christmas.

Pick some of the fresh basil that’s exploding in your garden for these zesty grain-free herb-flecked cookies.
I based this recipe (and photo) on one from Bon Appetit for Lemon-Lime Basil Shortbread Cookies. As you might expect, these are gluten-free, grain-free, sugar-free, dairy-free cookies. I used the same flavor profile as the Bon Appetit recipe, though decided not to make mine a shortbread cookie.

I’m a big fan of gluten free cookies, especially gluten free biscotti.
These Paleo friendly gluten free treats are a great addition to a high protein breakfast and also perfectly suited for dunking in healthy coffee for an afternoon snack that won’t leave you dragging. These peanut butter cookies are gluten free, grain free and vegan to boot. I based them on Heidi’s Peanut Butter Cookie recipe over at 101 Cookbooks, one of my favorite websites. Though I did cut the amount of sweetener in half and make a couple of other changes.

Last night I had a hunkering for gluten free peanut butter cookies. I went over to Elise’s site, Simply Recipes, and found a yummy looking recipe for gluten-filled Peanut Butter Cookies. I’ve been on a gluten free Hamantaschen rampage the last few days and these are my latest and greatest. I’ll be serving them at today’s Purim party for my younger son’s Chavurah. We’re having 7 families over in a little while to celebrate Purim and the story of Esther.

So all you agave haters gather round. These gluten free chocolate chip cookies are completely free of agave, I have used yacon instead.
What is yacon? It is a perennial root, composed primarily of water and Fructooligosaccharide (FOS). These short chain sugars have a lower caloric value (as they are digested anaerobically) and high fiber content. FOS is a prebiotic that is extremely helpful with digestion.
