Hey all you vegans out there, this dairy free Piña Colada Ice Cream might be just what you’re looking for on a hot summer day.  With a mere 3 ingredients (coconut milk, agave and pineapple), this simple vegan ice cream recipe will appeal to moms too.  I like the quick and easy dimension of the recipe and my boys love the flavor –they’ve been lapping it up all summer.

Vegan Peanut Butter Cookies

Posted on July 29, 2011

These peanut butter cookies are gluten free, grain free and vegan to boot.  I based them on Heidi’s Peanut Butter Cookie recipe over at 101 Cookbooks, one of my favorite websites.  Though I did cut the amount of sweetener in half and make a couple of other changes.

I have been on a bit of a peanut butter kick lately.  I didn’t eat peanut butter for a long time.  I just didn’t feel great when I ate it, however, I’m feeling ... read more →

Peanut Butter and Jelly Cookies

Posted on July 18, 2011

Last night I had a hunkering for gluten free peanut butter cookies. I went over to Elise’s site, Simply Recipes, and found a yummy looking recipe for gluten-filled Peanut Butter Cookies. I experimented a bit, made a couple of changes to her recipe and came up with a nice gluten free cookie dough. I then decided that it might be fun to make a gluten free peanut butter and jelly cookie.

So here you have it, high protein, gluten free peanut ... read more →

Apricot Power Bars

Posted on July 14, 2011

These healthy and simple energy bars are packed with energy.

Apricot Power Bars are a great grab and go breakfast or the perfect pick me up on the way home from the gym.  Kid-friendly (with white chocolate) and Paleo-friendly (with dark chocolate, or no chocolate at all) I’ve made these gluten free bars each and every way.

I used white chocolate chips from my local Whole Foods when I made these for the boys.  The chips come in a little unmarked ... read more →

Coconut Chocolate Chip Ice Cream

Posted on July 5, 2011

This Coconut Chocolate Chip Ice Cream is the perfect refreshment for a hot summer day.  Since every child in the neighborhood seems to be at my house at present, bouncing on our trampoline, it is going to make the perfect afternoon snack in a few short minutes.

It’s fun (and super easy) to make dairy free ice cream from coconut milk.  Low in sugar, and high in protein and good fat, I feel great about feeding it to the gang.

Popsicles from Simply Sugar & Gluten-Free

Posted on June 28, 2011

Summer is definitely here and our house is the place to be.  The neighborhood boys congregate on our trampoline –with the sprinklers aimed at it for a good cool down and a great deal of healthy fun.

With all of this activity I keep the food flowing morning, noon and night.  From the time they arrive until dinner (sometimes a bunch of them stay for the evening meal too) I am setting out munchies –snacks, lunch, etc.  They really are a ... read more →

Espresso Fudge Brownies

Posted on June 14, 2011

I was working my way through the Cook’s Illustrated website the other night and came across an amazing recipe for Triple Chocolate Espresso Brownies.  As soon as I laid eyes on that recipe I knew I had to create a high protein, gluten free version.  While my husband enjoys all of my gluten free chocolate recipes, this is his fave.  He even left a special love note on the fridge for me late last night after sampling them.

Of course this ... read more →

Chocolate Almond Joy Bars

Posted on June 10, 2011

These gluten free Chocolate Almond Joy Bars were inspired by Carrie of GingerLemonGirl.com who wrote a recipe for Almond Joy Impossible Pie.  Who doesn’t like the combination of chocolate, almonds and coconut in the form of a high protein, gluten free treat?

I don’t generally discuss nutrition because I assume most people who find this site know that that my recipes are different than most other gluten free offerings.  Ingredients such as almond flour and coconut flour do not compare to ... read more →

Dairy-Free Chocolate Mousse

Posted on June 7, 2011

This high protein, Dairy-Free Chocolate Mousse is made with anti-oxidant rich dark chocolate and contains no dairy products –a double win. I’ve also used coconut palm sugar to sweeten it.

Summer is moving along for us over here.  The boys made over $300 at their lemonade stand last weekend during the Mapleton Hill rummage sale.  They ran the stand with 2 other friends and baked tons of cookies from scratch for their little business.  I was so proud of them.  Maybe ... read more →

Apple Blackberry Crisp

Posted on June 3, 2011

There’s nothing like baked fruit desserts in summer.  With seasonal, fresh, luscious ingredients, this gluten free Apple Blackberry Crisp is the perfect healthy and scrumptious, warm weather delight.  When finished off with a high protein almond flour topping, baked treats such as this are superfood in the form of dessert.  Now what’s better than that?

Our summer started last Thursday when the boys finished school, and we are having an excellent time thus far.  Our house has been the setting for ... read more →

Will the Real Fudge Baby Please Stand Up

Posted on April 29, 2011

These super duper healthy, yet easy to make Fudge Babies have recently been the source of much contention.  You see, it all started when I did the giveaway for a Cuisinart Food Processor a couple of weeks ago.  In that post, I asked readers to let me know of their favorite recipes using a Cuisinart.  There were 2,204 comments on that post.  Guess what? I read each and every one of them.  No joke.

The comments were fascinating.  First, I love ... read more →

Chocolate Power Bar Balls

Posted on April 26, 2011

This scrumptious, dairy free, gluten free, vegan, super transportable snack is a power bar in the form of balls.  What I love most about it though is the flavor –they taste like raw cookie dough!

This recipe came from a comment on my Cuisinart Giveaway post, left by Karen; it is also similar to another recipe that many people mentioned on that post as their fave recipe, called Fudge Babies. Since these have just a tad sweeter than Fudge ... read more →

Silvana’s Mousse Cloud Pie

Posted on April 21, 2011

I met Silvana last year at Blogher Food and felt an instant connection with her.  She is magnetic in a smart, sophisticated, New York kinda way, and I was more than happy to spend a full day at the conference sitting with her for every session and sharing breaks together chatting.

During the day, our stories unfolded, and we learned that in terms of our children, we have much in common.  Silvana, the former editor-in-chief at Rachael Ray Everyday, began cooking ... read more →

Chocolate Peanut Butter Fudge

Posted on April 14, 2011

I love fudge, I do.  The only trouble with it is that most fudge is so sweet I usually feel sick to my stomach after eating it.  Needless to say, it’s been years, maybe even decades, since I’ve had fudge.

However, when I stumbled across this recipe for Peanut Butter Fudge by Laura Dolson, I knew I could have my fudge and eat it too!  Her recipe uses peanut butter (instead of the usual butter), and alternative sweeteners, rather than sugar.  ... read more →

Chocolate Raspberry Hamantaschen

I’ve been on a gluten free Hamantaschen rampage the last few days and these are my latest and greatest.  I’ll be serving them at today’s Purim party for my younger son’s Chavurah.  We’re having 7 families over in a little while to celebrate Purim and the story of Esther.

I hope you all enjoy these gluten free Chocolate Raspberry Hamantaschen!

Easy Black and White Cake

Posted on February 18, 2011

Looking for a quick and easy gluten free chocolate cake? This one is so simple that you can make it one pot and it doesn’t need a drop of frosting.  I’m hooked on this thick, fudgey, yet cakey treat.  I made it a couple of weeks ago during our Super Bowl party and it was gobbled up in mere minutes by our boisterous gang of guests.

If you are not in the mood for white chocolate, or wish to make a ... read more →

Valentine’s Day Cake Pops

Posted on February 1, 2011

All of you regular readers know that I have an obsession with making healthy (ok, “healthier”) gluten free cake pops.  Well, this obsession continues for Valentine’s Day.

I spent an afternoon in my kitchen last week in total chocolate chaos.  I even tweeted about it (if you’re not involved in the party that’s over on twitter you may want to join, I’m there several times daily, tweeting away).  On twitter I stated, or shall I say, tweeted,  “my kitchen is covered ... read more →

These healthier gluten free brownies are the perfect Super Bowl snack. My family loved them and I’m hoping my guests will too when I serve these treats along with my gluten free Super Bowl Cake Pops come next Sunday when the Packers take on the Steelers and I have my big, bad, gluten free Super Bowl party.

These brownies use high fiber coconut flour and are based on a recipe by Michelle from Gluten Free Fix; her recipe is called Gluten Free Fudge ... read more →
