The Gluten-Free Almond Flour Cookbook
One of the Best Cookbooks of 2009
-The Denver Post
It is estimated that three million Americans have celiac disease, which is one of the most under-diagnosed diseases in the country.
A gluten-free diet, while necessary for celiac sufferers, also benefits those with diabetes, high cholesterol, and IBS.
With recipes ranging from breakfast favorites to comfort entrées to baked goods, The Gluten-Free Almond Flour Cookbook offers delicious, nutritious, and whole-food recipes that will benefit anyone, with or without dietary restrictions.
Elana Amsterdam has been profiled in Fortune Magazine and the Wall Street Journal for her business ventures. When she and her son were both diagnosed with celiac disease, she was inspired to develop gluten-free recipes. She lives in Boulder, Colorado.

The first item I made from the cookbook was the Salmon Dill Burgers. It's funny really because before I began trying these recipes, I thought to myself, "I want something to satisfy my taste since I can't have normal food," but after eating these Salmon Dill Burgers, I thought, "This is normal food!" The Sesame Crackers and the Pecan Shortbread Cookies are equally normal (aka terrific)! I have not been disappointed with any of the recipes I have tried from the book. Everyone should buy it. I have spent over a week baking items from the book, and still, I haven't made anything that wasn't really great! I just tried another great recipe in the book--for Scrumptious Sandwich Bread, which uses almond butter. This is a wonderful bread recipe!

Hi Elana... I just received your cookbook in the mail last week and have already made the Chocolate Chip Scones and the Tropical Chocolate Chip Cookies (To die for!). I think they are my new favorite cookies! Just wanted to say Thank YOU for such a beautiful book packed with such great info and delicious and nutritious recipes! I love to bake and I feel you have taught me a whole new way to do it - sans the refined flours and sugars.

I LOVE your cookbook! Last night I made the Olive-Rosemary Bread. It turned out great. I toasted it and spread cheese on it... yum. This morning my 7 year old son and I made the Lemon Bars. They are AMAZING.

OH! MY! GOODNESS! I just made the Zucchini Bread from your gluten free cookbook. Only I made 12 muffins with the batter instead. I may eat them all before they even cool off!! I'll bet they'd be pure bliss with your Whipped Cream on top...

The Pecan Pie from your cookbook is wonderful! I was so pleased with the crust. It is amazingly tasty! This pie will be included in our family holiday events in the future! I also took your Chocolate Chip Cookies to our family meal and no one could tell they were gluten free! Thank you Elana for your knowledge of gluten free nutritious food that you continue to share with all of us on your blog! I am truly thankful for your talent!

Just finished a delicious batch of your almond flour Cinnamon Coffee Cake a la Sara Lee from your gluten free cookbook this morning. Working with your cookbook is like learning a brand new cuisine. So many discoveries. And interesting to be eating coffee cake and realize it is not empty calories but actually protein-rich.

I have made many of the recipes from your book and even though each one has been incredible, the one that I keep going back to again and again (which I can't remember if I got it out of your book or your website) is the Scrumptious Sandwich Bread recipe. This week I visited some friends in Ohio and brought a loaf. They made it disappear in one sitting and want the recipe. I now enjoy good sandwiches which are so healthy and taste wonderful. Thank you again for all the work you do.

I recently purchased your book, 10 pounds of blanched almond flour, agave nectar, and grapeseed oil. I have made the Pancakes, Cheddar Cheese Crackers, and Zucchini Bread. My husband, who is not celiac is raving! He thinks I have finally hit upon something he really likes. I love the simplicity of the recipes. I'm not blending four flours and adding products like xanthum gum, egg replacer, and gelatin. Thank you for your hard work in developing these recipes and publishing a cookbook.

I purchased your wonderful, delicious healthy new cookbook from Barnes & Noble. Everything I have baked from this cookbook has been delicious for us. For many years now I have (as well as my husband) been cooking/baking exactly like you state in all your recipes. I have been using wheat free - no white products - and including only Agave nectar as well as ground flaxseed in all my cooking/baking. Almond flour is truly a blessing. We don't have celiac issues but we do have Cholesterol control issues and Arthritis. Eating LEAN/GREEN/SUGAR FREE/WHEAT FREE allows us to feel better and much healthier. Thank you for producing such a fine website and fabulous truly dedicated to healthy living cookbook. I wish you much success in all you do. I will definitely be a follower! Thanks!

Since your book arrived I have made the Orange Apricot Scones, Scrumptious Sandwich Bread, Herbed Turkey Loaf, Black Bean Burgers, Peach Blueberry Crumble, Coconut Berry Crisp, Lemon Bars, and Apricot Tea Squares. Every single recipe has turned out wonderfully and everyone has loved them. There are so many more I can't wait to try! The girls take turns choosing what we will make from it each day. Thank you for putting it all together.
