The Gluten-Free Almond Flour Cookbook
It is estimated that three million Americans have celiac disease, which is one of the most under-diagnosed diseases in the country.
A gluten-free diet, while necessary for celiac sufferers, also benefits those with diabetes, high cholesterol, and IBS.
With recipes ranging from breakfast favorites to comfort entrées to baked goods, The Gluten-Free Almond Flour Cookbook offers delicious, nutritious, and whole-food recipes that will benefit anyone, with or without dietary restrictions.
Elana Amsterdam has been profiled in Fortune Magazine and the Wall Street Journal for her business ventures. When she and her son were both diagnosed with celiac disease, she was inspired to develop gluten-free recipes. She lives in Boulder, Colorado.

Reviews:
“For many people, normal food becomes off-limits when they find they have an allergy or condition, such as celiac disease. To wrestle new limitations into foods that are every bit as delicious and appealing (if not more so) is a coup to be celebrated.”
—Deborah Madison, Vegetarian Cooking for Everyone
“Elana has a tremendous gift for creating classic recipes using healthy ingredients. Her high-protein, gluten-free treats are incredibly tasty! I highly recommend this book if you are looking for good food that is also good for you.”
—Dr. Robert Rountree, Smart Medicine for a Healthier Child
"This lovely cookbook, full of enticing photos, has my mouth watering: Cinnamon Coffee Cake, Smoked Salmon Tart in an Herb Crust, Strawberry Shortcake … yum."
—Elisa Bosley, Delicious Living Magazine

Cookbook Testimonials:
I recently purchased your book. I have made the Pancakes, Cheese Crackers, and Zuchini Bread. My husband, who is not celiac is raving! He thinks I have finally hit upon something he really likes.
I love the simplicity of the recipes. I'm not blending four flours and adding products like xanthan gum, egg replacer, and gelatin. Thank you.
-Kathryn Olney
The first item I made from the cookbook was the Salmon Dill Burgers. It's funny really because before I began trying these recipes, I thought to myself, "I want something to satisfy my taste since I can't have normal food," but after eating these Salmon Dill Burgers, I thought, "This is normal food!"
The Sesame Crackers and the Pecan Shortbread Cookies are equally normal (aka terrific)! I have not been disappointed with any of the recipes I have tried from the book.
Everyone should buy it. I have spent over a week baking items from the book, and still, I haven't made anything that wasn't really great! I just tried another great recipe in the book--for Scrumptious Sandwich Bread, which uses almond butter. This is a wonderful bread recipe!

Hi Elana... I just received your cookbook in the mail last week and have already made the Chocolate Chip Scones and the Tropical Chocolate Chip Cookies (To die for!). I think they are my new favorite cookies!
Just wanted to say Thank YOU for such a beautiful book packed with such great info and delicious and nutritious recipes! I love to bake and I feel you have taught me a whole new way to do it - sans the refined flours and sugars.

I LOVE your cookbook! Last night I made the Olive and Rosemary Bread. It turned out great. I toasted it and spread cheese on it... yum. This morning my 7 year old son and I made the lemon bars. They are AMAZING.

OH! MY! GOODNESS! I just made the Zucchini Bread from your gluten free cookbook. Only I made 12 muffins with the batter instead. I may eat them all before they even cool off!! I'll bet they'd be pure bliss with your Whipped Cream on top...
