This recipe for handmade, gluten free and raw Cranberry Apricot Truffles is packed with nutrients, easy to make and aesthetically pleasing to boot.
After taking a brief hiatus from sweets, I am back on the dessert bandwagon! With Valentine’s Day rapidly approaching, I have been thinking of fun treats to give out to friends and family for the holiday.
Cranberry Apricot Truffles
Ingredients
- 1 cup dried apricots
- 1 cup dried cranberries
- 1 teaspoon orange zest
- 2 cups chocolate chips
Instructions
- Place apricots, cranberries and orange zest in food processor
- Pulse until fruit is chopped and forms a large ball
- Form fruit mixture into 1-inch balls and place on a parchment paper lined baking sheet
- In a saucepan over very low heat, melt chocolate
- Drizzle one heaping teaspoon of melted chocolate over each fruit ball
- Allow chocolate to harden, refrigerating if necessary
- Serve

First let me apologize, I am Asking This question about another Recipe, cause that recipe would not let me ask anything. Its about your fig newtons I’m not sure if you answered this question, I searched the Comments, but could not find this question. My bonus Mom gave me some fresh figs, I searched for a grain free recipe and found yours, but is has dried figs, can I use fresh ones, so I can use these figs. Thank you for all you do, you are a true Blessing to many that either have to, or choose to eat a cleaner way of eating. You are a gem Many Blessings

Leona, thanks for your comment and I hope you and yours are safe and well. Using fresh figs won’t work in my fig newton recipe, but when you get some dried figs you’ll love them!

I made these for a party last weekend and my friends loved them. They said things like “These are really good!” “These taste really expensive.” “You could probably have your child make a cute box for them and sell them at the Farmer’s Market for $5.00 a pair (don’t worry, I have absolutely no intention of doing so).
For fun, I made 1/2-inch truffles out of half of the mixture (and the usual 1-inch size out of the other half). The small ones were intended for the children at the party but I think the adults devoured most of them. These also went over very well at a family gathering during the December holidays. My partner’s aunt (like me) is a fan of your website and she was happy to know they were from you.

Are you able to post carb count on your recipes. My husband is a diabetic and it would be nice to know how much insulin he would have to take for these. I need to eat gluten free but with him being a diabetic we could really use it. Thanks so very much. <3

After waiting longer they came off the tray, actually my partner got them off somehow, when i was out of the room, she didn’t know they were two different flavors so now they are mixed up….grab bag…
Anyway these are awesome & I have plans to have a friend come over to make more soon.
p.s The blueberry ones were a little dry in the food processor so i blended in a handful of nuts for oil & it worked out nice…

i just made these, well half a batch with cranberries & half with dried blueberries…
The problem i have is they won’t come off the tray in one piece, they break off. Any suggestions?
