Stuffed Dates

Dates are as as sweet as candy, so of course, children like these treats. Adults enjoy the delicate blend of flavors. See for yourself, this dessert of Middle Eastern origin is quite tasty.
Dates Stuffed with Pistachios
1 cup pistachio nuts, shelled
¼ cup orange juice, freshly squeezed
1 teaspoon orange zest
1 pinch celtic sea salt
20 large dates
1 cup pistachio nuts, shelled
¼ cup orange juice, freshly squeezed

20 large dates
- In a food processor, pulse pistachios, orange juice, orange zest and salt
- With a sharp knife, make a slit on one side of each date and remove the pit
- Push a teaspoon of pistachio paste into each date; gently squeeze closed so that filling spills over
- Serve
Makes 20 stuffed dates

I have just come across your blog and I love it. These look so delicious! I am a GREAT fan of Celtic Sea salt and use it exclusively. Love the taste and its health benefits too.

J- Thanks for your comment. Isn’t Celtic Sea Salt the best? People are really catching on to its benefits and it is not as obscure as it used to be.
I just checked out your blog http://www.vegeyum.com/ and saw pictures of your beautiful trip to India. Funny that you commented over here, on this post about dates, as it is one of my recipes that really takes me back to my days of studying Ayurveda and teaching Yoga! Your India post took me back to those days as well.
