<description>&#60;p&#62;Experts say some celiacs won't show symptoms their entire lives but will still get the villi and other damage - I would say to stay on the safe side and have them avoid it...esp if they are likely to have sensitivities to it. Our son is not celiac but generally does better without it and I do all I can to avoid it all costs.

<description>&#60;p&#62;Okay, I made these but with modifications:&#60;/p&#62;
&#60;p&#62;For the crust, I used almond flour, coconut palm sugar, butter, and an egg. I just mixed it all up until I felt like it had the right consistency and pressed into the bottom of the pan. Then I heated a cup of coconut milk, 1/2 cup honey, and one egg on the stove and whisked it until it started to thicken like condensed milk. Then I poured it over the crust and added the toppings and pressed them down with a fork and baked it. I had to bake it for about 45 minutes. It tastes JUST like the magic bars I ate growing up!!! Try it!

&#60;p&#62;Ingredients&#60;br /&#62;
2 cups almond flour&#60;br /&#62;
2 eggs&#60;br /&#62;
1 cup coconut milk&#60;br /&#62;
1/4 cup coconut oil&#60;br /&#62;
1/3 cup honey&#60;br /&#62;
1 tablespoon vanilla extract&#60;br /&#62;
1 tablespoon coconut flour&#60;br /&#62;
2 cups dark chocolate morsels (do they make any dairy free?)&#60;br /&#62;
1 1/3 cups flaked unsweetened coconut&#60;br /&#62;
1 cup chopped nuts&#60;/p&#62;
&#60;p&#62;Directions&#60;br /&#62;
1.Heat oven to 350 degrees F (325 degrees for glass dish). Coat 13x9-inch baking pan with oil.&#60;br /&#62;
2.Press almond flour into bottom of pan.&#60;br /&#62;
3. Whisk together eggs, coconut milk, coconut oil, honey, vanilla, and coconut flour. Pour evenly over almond flour. Layer evenly with chocolate chips, coconut and nuts. Press down firmly with a fork.&#60;br /&#62;
3.Bake 25 minutes or until lightly browned. Cool. Cut into bars or diamonds. Store covered at room temperature.&#60;/p&#62;
&#60;p&#62;I just made this up modifying some of Elana's recipes. I haven't tried it yet.

<description>&#60;p&#62;Our 6 year old daughter has celiac disease and has been gluten free for ~3 years with significant improvements in health, thank goodness.  However, after removing gluten she still seemed to be sensitive to foods she was eating.  We did the ELIZA blood test and eggs and garlic were the two offending foods, both of which she ate a lot of.  We removed those ~2 years ago and her chronic congestion improved significantly. Unfortunately, while overall her health as improved amazingly, she is still prone to congestion after eating some foods (can't isolate which ones) and she often has loose stools.  &#60;/p&#62;
&#60;p&#62;So we're gearing up to try the SCD or Paleo diet with her for the month of February, as we have a strong gut feeling that she just doesn't tolerate grains well.  I eat Paleo and think it's an amazingly simple and sustainable way to eat.  BUT, I am having a really tough time imaging pulling it off with our daughter without giving her eggs!  Eggs are a staple when you're eating Paleo (or SCD).  &#60;/p&#62;
&#60;p&#62;I'm reaching out to this forum for advice, ideas, suggestions, creative recipes that might help make this feel feasible.&#60;/p&#62;

My husband has Celiac disease, and so far two of our seven children show definite symptoms of Celiac.  &#60;/p&#62;
&#60;p&#62;My question is, do you allow your children that do not show signs/symptoms of Celiac to eat gluten outside the home?  We are strictly gluten free inside the home, but I do allow some of my kids to have the occasional pizza at school, or cake at parties.&#60;/p&#62;
&#60;p&#62;I've been told two conflicting opinions on this topic... my doctors have told me not to worry about being too strict on diet for the kids not presently showing signs of Celiac; that I might in fact cause an intolerance to wheat unnecessarily.  On the other hand, I've had a friend with Celiac disease, who has done much research, that all of my kids are &#34;ticking time bombs&#34; and need to be entirely gluten free their entire life; sypmtoms or not.&#60;/p&#62;
&#60;p&#62;Does anyone have any advice?  &#60;/p&#62;

1/4 C. Millet flour&#60;br /&#62;
1 Tbsp. Arrowroot powder&#60;br /&#62;
1/2 Tbsp. Hain Featherweight baking powder&#60;br /&#62;
Dash of salt&#60;br /&#62;
1/2 C. Water (or nut milk)&#60;br /&#62;
1 Tbsp. Agave nectar&#60;br /&#62;
1 Tbsp. Oil&#60;br /&#62;
Oil for pan/griddle &#60;/p&#62;
&#60;p&#62;Combine all the dry and mix thoroughly. Combine the wet and mix thoroughly. Add the wet to the dry and yep, mix thoroughly. Heat pan/griddle on medium and spoon on mixture. Cook 2 1/2 - 3 minutes then flip. Cook for another 2 minutes. Enjoy.

I do it as the recipe calls for, except that I put in a little less grapeseed oil, use honey instead of agave nectar, and add cinnamon and nutmeg instead of lemon zest. (A bakery around the corner of my house has GF almond flour cranberry muffins with cinnamon and nutmeg and they are absolutely delicious).&#60;/p&#62;
&#60;p&#62;The inside of the muffin is somewhat moist, but the outside always comes out very dry and hard. The flavor of the muffin does not compare either. A few times I've even added a bit of reduced fat coconut milk, but it still did not come out well. Does anyone have any suggestions?

It took a few months to adjust to this type of eating and to feel full on just meats &#38;amp; veggies but you do adjust eventually. I've lost 20 pounds in the past 10 months since eating a gluten free Paleo diet and I eat nuts often, nearly every day.  I find they are easier to digest when I soak them overnight and then dry them in the oven on the lowest setting. (I have very sensitive digestion)!

We tried the chocolate cookie recipe and we both had gastrointestinal issues. The brick feeling, and lots of gas. We both tolerate and eat almonds whole, sliced, whatever with no problem. We also drink unsweetened almond milk daily. &#60;/p&#62;
&#60;p&#62;Since we noticed this right after eating the cookies (and to both of us) we attributed it to the blanched almond flour from honeyville that was recommended.&#60;/p&#62;

<description>&#60;p&#62;Lucas pawpaw ointment is really good to soothe the sore patches I find when I get a break out, so is coconut oil. I definitely agree with avoiding gluten and changing body products. I use only products on my skin that are made with natural ingredients and I also found that soy gives me problems in body products as well as when eat it - anyone else have issues with soy as well as gluten?&#60;br /&#62;
DH is so sore but it will go away I had it for 14 years on both hands and feet and a few months ago it disappeared and has not returned since. It gradually subsided for me and I was left with one patch on the palm of myhand for serveral months it got smaller and smaller and one day it just was gone. &#60;/p&#62;

&#60;p&#62;I am now in the middle of all this.  I can't have flaxmeal but I can have sprouted flaxmeal.  And am finding so far that if I soak and dehydrate oats - I can have them with no problems.  Same with sunflower and pumpkin seeds so far and also buckwheat.  I'm working on the other nuts, seeds and I just made apple muffins with soaking the quinoa flour in water with lemon juice overnight, then made the muffins in the morning and I did great - none of the reactions I used to get.  Yes, I am a believer.  Do some research as different items need to sprout for certain time periods and the times can differ and if they don't sprout long enough, it won't help in digestion. We just have to trial and error sometimes.  I, myself, am getting ready to try a place that has sprouted flours also.  It's my opinion we are on the right track!

&#60;p&#62;I have experience working in an office that deals with clients that are at the end of their ropes with different medical issues and the first thing done . . . change the diet.  The change starts at the core - protein and vegetables.  No grains, no dairy, no carbs. Humans were not meant to eat these items - that is why we have to soak, sprout, dehydrate grains, seeds, nuts, beans - to make them digestible for our human systems and even then some of us still can't have them. You can get a food allergy test done called ALCAT and also visit the website bodyecology.com - they have a great book in how to 'start feeling better' with a cleansing diet - great information. Don't give up on finding an alternative medical professional - they are out there and there could be some other issues they could help with while you are going through the changing of your diet.  Gluten is not the one and only issue that bothers out systems.  We need to keep the carbs low also and stay away from dairy unless it's raw and then it should be goat dairy.

&#60;p&#62;         My doctor put me on a gluten free diet about 3 months ago when he and I were talking about nutrition. He thinks that many of my health issues could be caused by gluen intolerence. He said that NY State does not do the test for that so the only way to know if that is the issue is to eliminate gluten from my diet. I have done that for 3 :moths and so far, its going ok. I am beginning to notice changes, but it takes much patence and time. If you think that is your problem, it is definitely worth trying. I am still learning every day. Many of m problems are inflammatory....psoriasis, psoriatic arthritis, asthma. I also have thyroid issues. I have had this &#34;brain fog&#34; for years thatl I read about in a book that is getting better too. Good luck on your journey.

<description>&#60;p&#62;I need some advice!! I have been suffering with multiple symptoms of someone who is gluten intolerant. I am fatigued, my stomach is always feeling upset, bloated, and I have been breaking out with for over 2 years on my right hand, elbows and legs with an itchy rash with fluid. I have been to multiple dermatologists and even had a blood test and biopsy done. All tests came back negative for gluten. One doctor did say that it was a form of Eczema. To my understanding the itchy rash is a form of eczema? I'm just so confused.  So, it's hard for me to even do the diet because I have no closure. I've done a lot of research on my own and am sure that's what is wrong, but for some reason I needed to have confirmation from a doctor before I completely eliminated gluten from my diet. I am only 22 and live by myself. I have no idea where to start with a gluten free diet. I'm just wondering if anyone else has my symptoms, and if I'm ever going to know for sure what is wrong?

Today - if you just take the time to google - you will find things to try.  Yes, a bunch is not going to turn out and why they ever get published is beyond me - but don't give up.  &#60;/p&#62;
&#60;p&#62;I suggest you start off with the prepackaged items at the store until you get a good feel for this healthier eating menu.  Some don't work like they say, but they are getting much better and yes Pamela's brand has good 'all-purpose' mixes.  Authentic is a good line and Bob's Red Mill has gotten better.  I bake mostly from scratch but I browse for my clients and I am constantly seeing more and more brands of 'mixes' all ready to just add moisture and then bake or prepare.  Look in the fridge section and the freezer section of the stores - tons and tons of choices.

<description>&#60;p&#62;I do not like using those silicone muffin pans - so if I'm not using the paper cups say for muffins that really don't need them, I like my non-stick pans and I still grease them well, but I also cut little circles from parchment paper and put in greased tins - this helps a lot.  I just take some time and cut out dozens of these circles and keep on hand.  Then when muffins are done, I use a tiny, thin spatula like tool to loosen sides carefully and muffins most often come out great.
