My husband has Celiac disease, and so far two of our seven children show definite symptoms of Celiac.  &#60;/p&#62;
&#60;p&#62;My question is, do you allow your children that do not show signs/symptoms of Celiac to eat gluten outside the home?  We are strictly gluten free inside the home, but I do allow some of my kids to have the occasional pizza at school, or cake at parties.&#60;/p&#62;
&#60;p&#62;I've been told two conflicting opinions on this topic... my doctors have told me not to worry about being too strict on diet for the kids not presently showing signs of Celiac; that I might in fact cause an intolerance to wheat unnecessarily.  On the other hand, I've had a friend with Celiac disease, who has done much research, that all of my kids are &#34;ticking time bombs&#34; and need to be entirely gluten free their entire life; sypmtoms or not.&#60;/p&#62;
&#60;p&#62;Does anyone have any advice?  &#60;/p&#62;

Has anyone noticed GI reactions- digestive issues- with the almond flour? I have the Honeyville flour and it IS certified gluten free now (I'm Celiac) so I'm not worried about that issue. &#60;/p&#62;
&#60;p&#62;I wanted to try the cookbook after reading Elana's comments about her reaction slightly to most grains- that they make her feel sluggish and low energy, affect digestion. That sounded like me, so I thought.. hm, this could work. &#60;/p&#62;
&#60;p&#62;What I've noticed is each time I've made a recipe with the almond flour (apple muffins, muesli bread, raisin bread, scones)- I have problems for several days. I gave away most of the muesli bread after having two pieces, wanted to avoid potential problems. Without getting too graphic- I feel as if I've eaten cement, or paste- everything slows down digestive-wise for several days. The baked goods taste fine (I also have made pear crisp, which is minimal amt of the flour- and it didnt'bother me). &#60;/p&#62;
&#60;p&#62;My other concern is .. if a person is gluten intolerant and/ or has multiple food intolerances..then switches to baking only with almond flour- how likely is it they will develop an intolerance to almonds. I would think it might be quite possible. I went off dairy at one point, switched to soy, then developed a soy intolerance. My naturopath told me to rotate stuff- that the way a person develops food intolerances is to eat the same thing over and over. I already drink almond milk and love it. And fyi I already asked Elana this same question directly, as a comment below one of her postings- and I did not receive an answer. &#60;/p&#62;
&#60;p&#62;Would appreciate any feedback. I'd still like to try baking with the flour, but may have to do it only occasionally and see if the problem still happens. &#60;/p&#62;

<description>&#60;p&#62;Our 6 year old daughter has celiac disease and has been gluten free for ~3 years with significant improvements in health, thank goodness.  However, after removing gluten she still seemed to be sensitive to foods she was eating.  We did the ELIZA blood test and eggs and garlic were the two offending foods, both of which she ate a lot of.  We removed those ~2 years ago and her chronic congestion improved significantly. Unfortunately, while overall her health as improved amazingly, she is still prone to congestion after eating some foods (can't isolate which ones) and she often has loose stools.  &#60;/p&#62;
&#60;p&#62;So we're gearing up to try the SCD or Paleo diet with her for the month of February, as we have a strong gut feeling that she just doesn't tolerate grains well.  I eat Paleo and think it's an amazingly simple and sustainable way to eat.  BUT, I am having a really tough time imaging pulling it off with our daughter without giving her eggs!  Eggs are a staple when you're eating Paleo (or SCD).  &#60;/p&#62;
&#60;p&#62;I'm reaching out to this forum for advice, ideas, suggestions, creative recipes that might help make this feel feasible.&#60;/p&#62;

<description>&#60;p&#62;How does one find out more about what is allowed on the Paleo Diet?  Also, I noticed some people have taken out nightshades (what are those)?  What is left to eat?  Is it possible to eat &#34;softer&#34; type foods?  If no grains are allowed or beans also, it seems very limited.  Isn't meat acidic forming and hard to digest?  I am supposed to be eating Paleo according to the doctor but don't know where to start.  There is alot of different information in books, and on the internet.  I am also having to eat softer type foods due to neck pain, swallowing issues.  Any help please? I do it as the recipe calls for, except that I put in a little less grapeseed oil, use honey instead of agave nectar, and add cinnamon and nutmeg instead of lemon zest. (A bakery around the corner of my house has GF almond flour cranberry muffins with cinnamon and nutmeg and they are absolutely delicious).&#60;/p&#62;
&#60;p&#62;The inside of the muffin is somewhat moist, but the outside always comes out very dry and hard. The flavor of the muffin does not compare either. A few times I've even added a bit of reduced fat coconut milk, but it still did not come out well. Does anyone have any suggestions?

<description>&#60;p&#62;I strongly suspect that I may have celiac, as I have a lot of the symptoms--I cannot tolerate gluten at all. Initially, I have had a lot of success in going gluten free, but I am finding that my body seems to be rejecting many gluten-free grains as well. For the past couple of months I have been eating a fair amount of brown rice (no gluten of course), and my guts are an absolute mess. I am working with a nutritionist to pinpoint the exact problem, and I have, up until this point, done well with a high raw, plant based diet. Currently, I am having some sort of major reaction--my tummy is blowing up like a balloon with almost everything I eat it seems, but is calmer if I eat only protein and plants--no grains. I am having crazy constipation, and it feels like my intestinal area is really inflamed. I feel really unwell, and am trying to figure out the best course of action for me. Do those of you with celiac tolerate other grains (I realize that this will vary)?? Obviously, I will be heading to the doctor if this doesn't clear up with work I am doing with my nutritionist.

&#60;p&#62;Long story short, I was diagnosed with Hashimoto's Thyroid disease, taking all it's prescribed medications, but my levels are always off regardless.  My doctor just mentioned that patients who started on a gluten-free diet dramatically improved...I guess there is a new study out linking Hashimoto's and celiac...&#60;/p&#62;
&#60;p&#62;To begin with, I want to feel better, but am frustrated about this decision...I LOVE everything that I now can't eat! &#60;/p&#62;
&#60;p&#62;What are other reliable sites for gluten-free foods that are safe?  I am finding some contradictory sites that say corn is safe, and then another that says it's not...or oat is safe, and another, it is not...&#60;/p&#62;
&#60;p&#62;Are there words other than gluten I should be looking for when I read a label?  &#60;/p&#62;

<description>&#60;p&#62;I was wondering if you had recommendations on how to stay gluten free while on vacation.  I was diagnosed with celiac 6 months ago and have done well cooking at home, however, I just returned from a cruise and found it very difficult to eat much of what was available and most of all feel confindent I was eating gluten free.  I spoke with the cruise line multiple times before booking our vacation asking if food was available and if I could do anything ahead of time.  I was assured that I didn't need to do anything. Food was available to me but it was very difficult to find someone that could tell me how things were prepared and what I could eat. Any advise or experiences you may have would be very much appreciated.&#60;br /&#62;

<description>&#60;p&#62;So I know TJ's almond flour is not one of elana's recommendations, but it was so cheap last time I was there I bought 5 pounds.  I'm on my second 1-pound bag now and have noticed a harsh, chemical, cleaning product-like undertaste to some of the things I've made with it that I've never noticed before with other almond flours.  The only ingredient on the label is &#34;almonds&#34;.  Anyone know what this is, or have a similar experience?  I don't want to throw it all out, but maybe i should?

<description>&#60;p&#62;hi -I'm from the UK, so am not familiar with cup measurements. However, I have bought a US cup and am measuring out my almond flour with it. I have a dilemna though - when I actually weighed out the amount in one cup, it came to 3.5 ounces. I thought that one cup was supposed to be no more than 3 ounces. I want to make double quantities of the simple bread, so overall, the difference is quite a lot! Am i measuring in the cup wrong? How many ounces should one cup be? And what about grams? ANd does it really make a big difference  how much almond flour to use?&#60;br /&#62;

<description>&#60;p&#62;Hubby has Crohn's disease and has started an anti-inflammatory food combining program.  9 year old intolerant to Gluten.  15 year old  can't have baking powder or egg whites.  and much more.  I am overwhelmed.  Do I need to have the 9 year old tested for Celiac disease or just put her on a GF plan and watch how her health and behavior changes?  We can all eat certain meats/fish and a few vegetables and fruits.  I am overwhelmed and need support from others who have gone before me.&#60;/p&#62;
&#60;p&#62;The good news is that we can all tolerate almonds, and they are an anti-inflammatory food.  I have ordered some good almond flour and a loaf pan to make bread.&#60;/p&#62;
&#60;p&#62;I feel sad about my family giving up certain foods we have enjoyed as treats, and the impact this could have on our social life.

I thought I would share in case others have found themselves in the same situation.1/4 Grapeseed Oil1/4 Cup Agave Nectar1 tsp. Vanilla1 Egg beaten1 1/4 Cups Almond Flour1/4 tsp. Celtic Salt1/4 tsp. Baking Soda1/2 Cup UDI's Gluten Free Cranberry Granola/Oats3 Dashes of Cinnamon1/4 Cup of Raisins*** I added a bit more almond flour at the end to thicken it up a bit***Combine dry ingredients in a large bowl and combine wet ingredients in a small bowl, then mix together. Spoon small amounts of batter onto parchment lined baking pan. Bake at 350 till golden brown. Enjoy!

&#60;p&#62;My son, Anders, is 19, he has RP, has lost most of his vision, it came on rapidly last year.  Since, we started with acupuncture, we have 3 different Acupuncture Physicians under our belts now, Weidong Yu in Vancouver Canada, Per Otte in WV, he also recommends these super duper vitamins from Progressive Labs in Irving, Tx.  And, Pran Mumma, in Dade City, Florida...  He recommended Anders learn Qigong for better oxygen in his system, and through this group we ventured into the Whole food blending, (just got my Vita Mix and love it!)&#60;/p&#62;
&#60;p&#62;Now, our current therapy -- we fell into, by way of an article in a local paper, Osprey Observer, their September 2010 issue.  An article about a fund raiser that was held for a young lady,  -- It was to help her, so she could get her own Hyperbaric Chamber.  I gave this organization a call and two weeks later we started HBOT.    Anders is on his 32nd &#34;dive&#34;... and his is complaining he needs his glasses changed again.. so, that's a good thing! ... please look at the web site &#34;Chamber of Hope&#34;, it's in St. Pete, Florida...  Just take a bit of time and read his site, and maybe the papers article and research a little... &#60;/p&#62;
