Has anyone used a Ninja blender? If so do you like it and how does it compare to a Vitamix. I want to get something that can still juice but make nut butters and all that good stuff... Any thoughts?

Hi Team! :) i'm just startign to eat gluten-free... Paleo to be exact. I'm allergic to dairy and i really do love my veggies.

I want to make several of the delicious recipes here, but i don't have either a food processor or a vitamix. Is the average blender not good enough? If i should buy the vitamix or the food processor, which should i invest on first?

Thanks guys!

Hi - I am looking to buy a grinder that will grind nuts into flours for my foods, but also have a hopper and grinder that can be thoroughly cleaned to grind wheat and other grains for my husband. I am grain-free, but not celiac, so absolute purity is not essential, but I would like to be able to clean after the grains so my nut flours aren't contaminated for the most part.

Anyone else grinding both grains and nuts? What is your solution?

Hi everyone

I have a question concerning the Vitamix. I have looked it up and it is quite expensive. A regular food processor isn't strong enough to pulverize cashews, for example, to make cashew milk.

Can anyone recommend a substitute for the Vitamix? Something a little cheaper that still gets the job done!

Thank you

Hi Elana! I recently stumbled upon your book (which then led me to your blog and now this forum! :D) as I was researching gluten and sugar-free cakes/food to make for my daughter's first birthday.

The recipes look (and sound!) delicious and I'm already incredibly inspired despite the fact that I haven't tried any yet! I began trying out my very first recipe from your book tonight (Smoked Salmon-Leek Tart) and I baked the Herb Tart Crust in a 9-and-a-half-inch Le Creuset stoneware pie dish in a fan-assisted oven at your recommended temperature of 180 C (350 F).

The crust was lovely, golden and smelled fantastic but the scallions on the surface looked a little browned (the ones embedded in the crust still looked green). I'll be preparing and baking the filling tomorrow morning but in the meantime please could you tell me:

1) What oven do you use - convection or fan-assisted?
2) Do you bake your pies, tarts and quiches with stoneware or stainless steel dishes?
3) Is it normal to have browned (or "caramelized", as my husband calls them!) scallions on the surface of the Herb Tart Crust?

Thank you so much for your time.

Hi, I am new to this site and I enjoy so far what I have seen. Except about the baking pans. I noticed that Elana that you have places to buy along side your chosen pans and some are nonstick, aluminum, glass loaf pan and mini pans( but no description) . I know that in order for your recipes to come out right... that we should use what you suggest. And I thank you very much for the information. But I do not agree with non stick or aluminum. Aluminum goes with parkinson disease and should never use it even in foil.I would like to know if all steel or tin with steel coating is a good choice? As for the mini pans I am stumped? Thank you for any help as I am going to buy your cookbook, muffin book and want to get started .Even on your website ...I tried a few things already and I was very pleased. Thank you so very much.

I've decided I need one and have been researching food processors, since I want to be able to make hummus and Elana's version of a Larabar. So it needs to puree heavy ingredients well. I don't really need it to chop since I have a small chopper. The 7 cup Kitchenaid looks good to me, since I am cooking for just two of us. Does anyone out there have feedback, good or bad, on any brand food processor in this size range?

This might seem a silly question to ask on this board, but I am in need of pantry organization advice! The picture of Elana standing in front of her beautifully organized pantry has left me drooling as much as the recipes!

Since we are gluten free and trying to stick to single, all-natural ingredients, I have a TON of ingredients in these silly little bags and odd-shaped boxes. I can never find anything. What is the best way to organize all this "stuff" to turn it into a well-functioning, intuitive pantry and not a big ol mess? Could you post a few more pictures of how things are organized for visual folks like me?

I live in Australia so won't necessarily have access to American brands here. Somebody else on this forum mentioned the difficulty of sourcing almond flour here but I am going to try grinding my own blanched almonds to as fine a texture as I can get them.

I am looking specifically for tart, pie and cake tins which will work well with almond flour.

Should I go for light or heavy weight pans?

One of the light tart pans had perforations in the base - to help make crispy pastry it said - would this help with nut based 'pastry'? Or do heavy weight pans give the best results?

Also... The problem with the glass pie dishes (that I can see) is how do you get the pie out of the dish - or are you not meant to? I think I would like to be able to take the pies out.

Hi everyone - I recently read an article in Organic Living magazine talking about how the lids of typical canning jars have a coating on them containing bisphenol A. The article said that if your food doesn't touch the lid it should be fine but otherwise there is a possibility of contamination. The article said that Weck jars do not have metal lids and therefore there is no chance for contamination. I am deciding what kind of canning jars to purchase and not sure how concerned I should be. Is the bisphenol A in canning jar lids a concern to anyone else?...

I live full-time in a motor home and have a microwave/convection combo oven. I never use the microwave, but I do use the convection for everything. It's taken me a lot of experimenting to find the best way to bake, roast, reheat and defrost in the convection.

I'd like to know if anybody uses a convection oven for Elana's baked goods?

I've found that any of them that call for 350 degrees and a short baking time doesn't work for me. I generally use 300 degrees for a longer period of time and things come out fine. I've made Elana's Simple Bread, Nut Bread, Chocolate Chip Cookies, Sesame Cookies, Orange Cake, Almond Butter Brownies, and they were all delicious. The only failure I've had were the Prune Truffles.

I've had a package of Coconut Flour in my pantry for months, but haven't tried anything in the convection oven with it yet. I hesitate because I can't eat things with too many carbs which is why I love the almond flour recipes. However, I am having company this coming week and might try one of the coconut flour cake or muffin recipes. I'll post how well it comes out using Elana's instructions if I do.

If you are sick of using dull knives i have the answer!
Cutco knives not only last years before dulling, but they also have a FOREVER guaranty.
This means that you will never have to buy a knife again. If they break or dull you can just send them to the company and they will replace them free of charge.

I am selling these knives and if you are interested please give me a call or email me.
What we would do is schedule a fun, quick, appointment where i would come over and show you the knives. We could cut up some yummy food and have a great time. There is no pressure to buy because I get paid just for the appointment. So if you are interested in helping a college student out and having an awesome time please contact me.

The Magimix 4200XL food processor is the greatest addition to my kitchenware ever. I don't know if it is very widely known in the US since it is a French brand. Since I don't have a very large kitchen, I don't want a juicer, blender, food processor all crowding on the counter. Magimix processors come in a variety of sizes, I use the second largest processor. It works beautifully for all smoothies, soups, pesto's, grated products like coleslaw, bread dough, whipped eggwhites, cashew milk etc etc. The motor adjusts itself to the amount of product you use so it is very easy to use. Many restaurant cooks in Europe use the Magimix as well. I recommend this processor highly!
How about your favorite hardware?
