<description>&#60;p&#62;Yes, according to Carol Fenster (author of many GF recipe books) you can substitute tapioca flour for arrowroot.  Arrowroot tends to be a bit more expensive than tapioca and around where I live I can buy tapioca in bulk directly from the local 'health food store'.  And since neither are from grain sources using either sticks with the grain-free mode!  schpinkle

&#60;p&#62;IMHO, coconut flour and almond flour are the tastiest, healthiest gluten-free flours.  I'm not one to count calories or worry about fats (especially good fats), however, I do understand your concerns as no matter how healthy a food is, if overeaten, ill health will result.&#60;/p&#62;

Elana,can you explain to me, again, why you have chosen to use coconut and almond flours?  I know you have many allergies, besides, gluten.  But these flours are higher in fat...although a good fat...and I can't stop at one or two pieces...so I am concerned about the fat and calories.  Can you &#34;ease&#34; my mind??:&#38;gt;&#60;br /&#62;
