I have made eggplant parmesan, or chicken parmesan with bread crumbs before. I use egg whites instead of egg yolks and I use sheep or goat cheese instead of other cheeses. This is only because of my allergies but it comes out so delicious everytime!

This may not get rid of 2 large bags, but I use gluten free bread crumbs when coating any veggie patties that I make - used instead of coating the pattie in flour or cooking without a coating.

I find it gives a really crispy texture to the outside, and helps keep them moist on the inside. You can even throw I a bit in the pattie mixture itself to bulk it out or soak up extra moisture if you get a bit excited with the wet ingredients (like I often do!)

In The Tightwad Gazette by Amy Dacyczyn she has a recipe for breadcrumb cookies.
Mother Earth News has this recipe for bread crumb cake http://www.motherearthnews.com/Real-Food/1978-09-01/Bread-Crumb-Molasses-Cake.aspx
You could use it as a savory topping over baked stuffed tomatoes or peppers

Hope this helps.

Hi Patt,

No ideas here YET, but your idea of freezing bread crumbs has got me inspired now!
Whenever I have a recipe that fails, I usually cry over it for a while and then start over from scratch... Thanks for the great idea and I'll hope to be back with an epiphany!

Hi Everyone,

In my adventures of bread making, I have accumulated a LOT of bread crumbs. When a bread didn't rise etc. I put it into the food processor and volá, bread crumbs. Now that I have two large bags of frozen bread crumbs, I'm wondering if anyone has an idea for making something out of the bread crumbs like a dessert, or stuffing, but not the usual, which is to bread meat etc. I would really appreciate any ideas you might have.
