Hi. Our family eats Paleo. Have you bought Elana's book? Great recipes. Most fit with Paleo. I leave out the Arrowroot Powder, and use Honey instead of Agave.

I also find a lot of recipes in the Specific carbohydrate Community. Try http://www.scdiet.com. The Midas Gold Waffle recipe is my favorite. I use oil or butter in place of the honey.

Have you read The Paleo Diet? Have you tried meat and fruit for breakfast? We make pork chops breaded in almond flour quite often for breakfast, and they are divine. We had them today with Honeydew melon slices.

here is a link to my coconut flour waffles. there are many other breakfast recipes here, such as scones, pancakes, frittata, etc. that fall under the primal category, though i don't follow the paleo diet as thoroughly.
best of wishes!

I make my own with nuts. Just chopped nuts or nut meal(can mix more than one kind, toasted or not), sweetener of choice and milk of choice. Tastes good and with a bit more protein holds me till lunch. Makes a good snack too when you need just a bite.

My mom lives on buckwheat in the morning. Of course, this is buckwheat straight, not pancakes or anything like that. Buckwheat is actually a fruit and not a grass/grain. I have been meaning to ask Elana about her opinion on buckwheat.

I use this brand for easy cooking.
http://www.poconofoods.com/

My mom buys the buckwheat in bulk and just soaks the raw groats overnight and eats it in the morning like grapenuts with seeds, dried fruit and almond milk.

I like perchasing the KASHA from Pocono and cooking it as a hot cereal in the morning or making it as a savory side for a dinner.

I have found this brand at my local heath food store and at Whole Foods.

During the week, I like to eat breakfasts that are quick and that I don't have to cook. Last week I made Elana's grain-free granola, and have been eating that every morning this week. I love cereal and haven't been able to enjoy it since I stopped eating grains, so it has been a welcome treat. Does anyone know of any other recipes for grain-free cereals? Or any grain-free alternatives that are sold in stores?

I have quinoa flakes, and should use them nutritionally, but I just don't like the flavor. I want to try finding/making puffed amaranth sometime, though. But those are good suggestions.

My favorite granola/granola bar recipes:

Granola, this works fine subbing sucanat for the brown sugar. You could sub the oats as noted above:
http://www.foodnetwork.com/recipes/alton-brown/granola-recipe/index.html

Granola Bars: this recipe is VERY flexible. You can use whatever you want for the dry ingredients (puffed rice, oats, quinoa flakes, nuts, etc.) and you can sub a nut butter or coconut oil for the butter if you want. I don't bother with the brown sugar either.
http://www.naturallyknockedup.com/2008/09/granola-bars.html

zebe912, I sub a mixture of Quinoa flakes and Millet flakes (sometimes buckwheat flakes) instead of oats in my granola recipe, they work very well, for those tha cannot handle oats or can not obtain certified GF oats :)

PURE brand bars are really good (made in Michigan) as are the Lara bars. If you want something to make, then try out some different GF muffins. There are a LOT of recipes out there now that you can search for.

I have a granola that can be made with GF oats and it is my most favorite breakfast of all. But I can do oats and some can't, or won't, since it is so hard to know their origin.

I tried the grain free granola and I liked the texture of it. I couldn't get it to be crunchy enough, though so I baked it again and almost burned it. It's been about 2-3 months that I've been gluten free and over a month that I've been grain free. I think maybe the raisins didn't agree with me. I think it's a great idea to use raisins as the sticky base, but maybe my system just isn't ready for it?

I've never had problems with raisins before, or with many of the foods that I'm reacting to now. I wonder if making the granola with a honey or agave base would work? Maybe some butter? I'd like to find an alternative.

The children either have a muffin or yogurt for breakfast and they are getting a little bored. I need some quick easy recipes for the morning. They don't care for eggs in and of themselves, but will eat them in other foods.

Thanks for any suggestions.

Blessings,
Betty
