Hello,
My husband has Celiac disease, and so far two of our seven children show definite symptoms of Celiac.

My question is, do you allow your children that do not show signs/symptoms of Celiac to eat gluten outside the home? We are strictly gluten free inside the home, but I do allow some of my kids to have the occasional pizza at school, or cake at parties.

I've been told two conflicting opinions on this topic... my doctors have told me not to worry about being too strict on diet for the kids not presently showing signs of Celiac; that I might in fact cause an intolerance to wheat unnecessarily. On the other hand, I've had a friend with Celiac disease, who has done much research, that all of my kids are "ticking time bombs" and need to be entirely gluten free their entire life; sypmtoms or not.

Does anyone have any advice?

Thanks so much,
Lori

Elena:
It appears that your boys go/went to Waldorf school. Mine are starting this year.

I am interested in helping my own Waldorf school, and perhaps others, understand and implement gluten-free classroom. This is my son and daughter's first year in an early-childhood Waldorf classroom and I am preparing to enter a dialog about gluten-bearing grains, soaking grains and alternative, low-allergen snack foods that will continue to support the weekly rhythm and experience of food preparation by and for young children.

I am seeking supporting information and resources to share with our school about how Waldorf teachers have implemented gluten free experiential rhythm. Perhaps, even grain-free.

Thank you in advance for your time and help.

Hi everyone,

I am very new at this--at everything that is, forums, gluten, casein, etc.--my oldest daughter has been placed on the GFCF diet because of a suspected autism spectrum disorder and I am struggling to find foods she will eat! I love this site--it is a big help with those links right to the special ingredients--if only life was that simple :) I was wondering if anyone else is visiting this site for GFCF diets or if they have children going through this. My daughter is 2--I can't get her to eat ANYTHING! The only things she will eat are gluten-free, dairy-free, sugar-free chocolate bars and organic homemade french fries. Since I have heard potatoes can feed the bad bacteria inside their tummies, I have been trying to avoid french fry overloads--but its hard when that is all she will eat!! She is so thin!! Any tips?
