<description>&#60;p&#62;Last night, I tried baking the coconut cupcakes in Elana's cupcake cookbook. They came out super moist and darker than I expected but I noticed when I bit into one that it seems all the fat/oil sunk to the bottom. The bottom half of the cupcakes are darker and much more moist. The bottom also has a more heavily concentrated agave taste to it. My only other experience baking with coconut flour as the only flour was a yellow cake I made from a recipe by Bruce Fife where the eggs shifted to the top and one side giving that section a quiche like flavor and consistancy. Any suggestions on how to fix the problem of shifting ingredients? Has anyone else experienced these kinds of problems when baking with coconut flour?

<description>&#60;p&#62;All flour contains some moisture, albeit trace amounts, that can lead to it turning.  I would think though that the flour would have to be quite old or poorly stored for mold to grow.

I am eagerly awaiting my  almond flour from Honeyville, but in the meantime I would like to bake me  a cake for my birthday and all I have is coconut flour. &#60;p&#62;This morning, my first attempt at a &#38;amp; c flour.  I moderate gluten but am not entirely GF so my first attemps was a mix but next round I will go entirely almond and coconut.&#60;/p&#62;
&#60;p&#62;What I did this first round was take your ratio of 3 parts almond to 1 part coconut.  I measured 2 cups of all purpose flour ( that's what recipe called for) and weighed it.  I used 1 cup of all purpose flour, took 1/2 the weight, i.e. the weight of a cup of regular flour and used 3/4 that weight almond flour and 1/4 that weight of coconut flour AND added an extra egg.  This worked wonderfully and I like the flavor but it is 1/2 gluten flour.&#60;/p&#62;
&#60;p&#62;When I make the recipe next - GFree, I will use 3/4 the weight of 2 cups all purpose flour, 1/4 the weight of coconut, and extra egg AND an extra egg white.

<description>&#60;p&#62;I haven't been on in a while, so I hope I'm not being redundant.  I just had to let you know about an experiment I treid that went really well.  I am not generally successful i the kitchen when I stray too far from recipes, but I decided to make a coconut AND Almond flour chocolate cake.  (Now that I think of it, I used both agave and yakon syup too.)  Anywya as much as love Almond Flour, it can be pretty oily at times in the results, and seems to increase in oiliness over time.  Cocnut flour however, is very absorbant.   I just had a notion, and essentially combined 2 of your recipes to make a cake of my own with these elements.&#60;br /&#62;
I will share the recipe here, although, I can't offer a baking time.  Our oven is really hard to set and is wildly off the mark.  It's mostly just a guessing game here.  We just baked at 350 til my husband said he thought it was beginning to smell like it might be done.&#60;br /&#62;
I combined in a large bowl:&#60;br /&#62;
approx 1.5 c. Almond Flour&#60;br /&#62;
1/2 c. Coconut Flour&#60;br /&#62;
1/4 c. Cocoa Powder&#60;br /&#62;
1/2 t. Salt&#60;br /&#62;
1/2 t. Baking Soda&#60;br /&#62;
I whisked in a medium bowl:&#60;br /&#62;
1/2 c. Agave Nectar&#60;br /&#62;
1/2 cup of Yakon Syrup diluted by about one third with hot water&#60;br /&#62;
4 Large eggs&#60;br /&#62;
1 T. Vanilla&#60;br /&#62;
approx 1/4 cup Ghee (I think you could sub Grapeseed Oil just fine)&#60;br /&#62;
approx 1/4 cup of water (adding more if the batter looks too thick.  I mixed mine to the&#60;br /&#62;
       consistency a little more fluid than a brownie batter, but not as runny as a&#60;br /&#62;
       traditional cake batter.)&#60;br /&#62;
Stirred the wet ingredients into the dry and baked at approx 350˚F in a greased square&#60;br /&#62;
       brownie/cake pan until it smelled like it might be done.&#60;br /&#62;
The result was a somewhat dense but moist chocolate cake that was a big hit with all my&#60;br /&#62;
       guys and kept its character for several days (until it was all gone).&#60;br /&#62;
This was my first effort, and although I consider it to have been very successful, I look forward to trying new ways to combine these complimentary flours.  I hope you will too, and share your results. :^)

<description>&#60;p&#62;You CANNOT substitute coconut flour for wheat flour. You will absolutely ruin the recipe. Coconut flour has no protein (unlike wheat and various other flours) and must have a lot of protein added in to hold the ingredients together. Most coconut flour recipes have a lot of eggs. I've seen 4 eggs for 2 T (yes, that's 2 tablespoons) coconut flour.&#60;/p&#62;

The recipe calls for 2 cups of flour and I want to use coconut flour. How should I do this? Also, the recipe already calls for 2 eggs to be used. &#60;p&#62;I usually make cheese, tomato and hummus sandwiches, mini veggie pot pie, and veggie sloppy joe's with them; and friends love bacon and egg breakfast sandwiches as well as meat versions of my aforementioned faves. I would also like to try mini fruit pies, yum! :P&#60;/p&#62;
&#60;p&#62;My challenge is, how to use the cookers with almond/coconut flours, instead of the usual flour bread? The almond breads from the small loaf pan would be too small; you would just end up with a sticky mess... I wonder if I could bring almond flour with me and do an on-the-spot press-in dough of some kind... &#60;/p&#62;
&#60;p&#62;I know this is probably out-there for most people, but if anyone has any tips, that would be great!&#60;/p&#62;

<description>&#60;p&#62;I'm also eating Paleo and now make Elena's Choc Chip cookies substituting the agave (16 g carb/serving) with a syrup made of 3/4 c coconut palm sugar + 1/4 water (4 g carb/serving).  This coco palm syrup formula makes slightly more than called for in Elana's recipe so next time I will weigh it in grams to get a more precise measurement that equals exactly what is called for in her recipe.  These taste just like her original to me--same fantastic texture.

<description>&#60;p&#62;Coconut flour is so very different from other flours- grain or nut- that there is no good rule of thumb for substituting.  You really have to create a recipe from scratch.  It would be better and save you a lot of time and headache to look up recipes that already use those other ingredients.  Elana has a lot of recipes here on the blog and in her cookbook that are almond-flour based if you are still looking for something high-protein.

<description>&#60;p&#62;Leslie, I converted your pumpkin bread recipe to gluten-free and sugar-free using Elana's recipe for Zucchini Bread.  Here's what I came up with, and it is very yummy!  -Cheryl&#60;/p&#62;
&#60;p&#62;Pumpkin Walnut Bread&#60;/p&#62;
&#60;p&#62;Ingredients:&#60;br /&#62;
1 cup agave nectar&#60;br /&#62;
1/4 cup grapeseed oil&#60;br /&#62;
3 eggs&#60;br /&#62;
2 1/4 cup almond flour&#60;br /&#62;
3/4 cup sifted coconut flour&#60;br /&#62;
1.5 tsp salt&#60;br /&#62;
1 tsp cinnamon&#60;br /&#62;
1 tsp nutmeg&#60;br /&#62;
2 tsp baking soda&#60;br /&#62;
1 tsp baking powder&#60;br /&#62;
2 tbsp water&#60;br /&#62;
2 cups cooked mashed pumpkin&#60;br /&#62;
1 cup chopped walnuts&#60;/p&#62;
&#60;p&#62;Method:&#60;br /&#62;
Preheat the oven to 350degF.&#60;br /&#62;
Oil 3 small Magic Line Medium Loaf Pans (7.5&#34;x3.5&#34;x2.25&#34;) and then dust them with almond flour.&#60;br /&#62;
In a large bowl, whisk agave nectar and oil.  Then beat in eggs one at a time.&#60;br /&#62;
In a medium bowl, mix almond and coconut flours, spices, salt, baking soda, and baking powder.&#60;br /&#62;
Add dry ingredients to wet, alternating with water.&#60;br /&#62;
Add the pumpkin to the batter and mix.&#60;br /&#62;
Stir in walnuts.&#60;br /&#62;
Divide the batter evenly between the 3 loaf pans.&#60;br /&#62;
Bake at 350degF for 70-90min, depending on how brown you like it.  Knife inserted in the center should come out mostly clean.

&#60;p&#62;How To Make Coconut Flour Bread&#60;br /&#62;
This is so drop dead simple, even the worst cooks can make this at home. It uses 4 ingredients, 2 of which are from coconuts.&#60;br /&#62;
6 eggs&#60;br /&#62;
1/2 cup melted coconut oil&#60;br /&#62;
1/2 teaspoon sea salt&#60;br /&#62;
3/4 cup coconut flour&#60;br /&#62;
Ideally you’d want to use pasture eggs from your local farmer rather than supermarket eggs because of the improved nutritional profile pasture eggs have. Do what you have to do though.&#60;br /&#62;
Mix all ingredients together and pour into a small bread pan wiped down with a little coconut oil.&#60;br /&#62;
Bake at 350 degrees for 40 minutes.&#60;br /&#62;
Empty the bread out onto a towel or plate and leave it to cool for a while. Lining the bread pan with a little coconut oil should make the job easier.&#60;br /&#62;
Because the bread is so dense, it doesn’t rise very high as you can see in the picture. When you prepare your bread pan with the oil, pay attention to the bottom portions of the pan.

&#60;p&#62;Servings: 1 small pizza&#60;br /&#62;
Preparation Time: 20 minutes&#60;br /&#62;
3 eggs&#60;br /&#62;
1 clove garlic, crushed or minced&#60;br /&#62;
1 cup whole milk or coconut milk&#60;br /&#62;
1/2 cup coconut flour, sifted&#60;br /&#62;
1/2 teaspoon baking powder&#60;br /&#62;
1/2 teaspoon salt&#60;br /&#62;
1 teaspoon dried oregano&#60;br /&#62;
1 teaspoon dried basil&#60;br /&#62;
Preheat oven to 375 degrees.&#60;br /&#62;
Beat eggs in a medium sized bowl. Mix in milk and garlic.&#60;br /&#62;
Add remaining ingredients and beat into the milk mixture. The dough will be thinner in consistency then regular dough (more like a batter). Add just a bit more coconut flour if needed. The dough needs to be spreadable and thin but not extremely liquid-y like pancake batter.&#60;br /&#62;
Spread thinly and evenly on a pizza pan or cookie sheet lined with greased parchment paper (parchment paper is a must require!! This sticks terribly!).&#60;br /&#62;
Bake for 12-20 minutes in preheated oven. Crust is done when fully cooked through and bottom edges begin to brown.&#60;br /&#62;
Remove crust from oven and turn over. Carefully peel parchment paper from the bottom of the crust and place crust back on parchment paper with the bottom side up.&#60;br /&#62;
Top your pizza with sauce and whatever else you would like. Bake for another 5-10 minutes, depending on the toppings

It's some kind of freak chemical reaction, I can't remember the specifics of it, but I have a cookie recipe that uses sunbutter and turns green when it cools.  We use it for St. Patrick's Day cookies sans food coloring.  :)&#60;/p&#62;

So, for the last six months I have been eating die-hard Paleo (no grains, dairy, legumes, or soy of any kind) and I've had quite an adventure discovering new ways to cook (especially bake) and enjoy food.  One of the things I missed most when I &#34;went Paleo&#34; were classic chocolate chip cookies.  I couldn't find any recipes that fit within my diet that I found satisfying...and so I made my own!  I am extremely pleased with it and I hope others enjoy it too.&#60;/p&#62;
&#60;p&#62;Paleo Chocolate Cookies:&#60;/p&#62;
&#60;p&#62;1/2 cup + 1 tablespoon coconut flour&#60;br /&#62;
1/2 teaspoon baking soda&#60;br /&#62;
8 tablespoons refined coconut oil&#60;br /&#62;
1 cup blonde palm sugar&#60;br /&#62;
2 large eggs&#60;br /&#62;
1 1/2 teaspoons vanilla&#60;br /&#62;
1 cup chocolate chips (I buy a brand that is for those with allergies that is guaranteed to be soy and dairy free)&#60;/p&#62;
&#60;p&#62;- In a medium bowl whisk the coconut flour and the baking soda together.&#60;br /&#62;
- In a large bowl mix together the coconut oil, palm sugar, eggs, salt, and vanilla.&#60;br /&#62;
- Then mix the dry ingredients into the wet.&#60;br /&#62;
- Add the chocolate chips.&#60;br /&#62;
- Bake at 350 for 13 minutes.&#60;br /&#62;
- Enjoy!

<description>&#60;p&#62;I'm also extremely mold sensitive and have become sick from eating coconut flour that I suspect was moldy. I know Elana likes Tropical Traditions flour, but that one always makes me feel congested and dizzy, even if I just put my nose in the bag and smell it. I also bought a jar of their coconut cream and became so sick I almost had my husband drive me to the hospital. I was in bed all day after eating it. &#60;/p&#62;
&#60;p&#62;The texture of Tropical Traditions' flour is much better in baked products compared to Bob's Redmill, but I think Bob's Redmill is drier and therefore less moldy. I've had fewer issues with that brand of coconut flour, though it is much more difficult to get a good result with my baked goods. I'd rather have crumbling cakes than feel sick, though. &#60;/p&#62;
&#60;p&#62;I know you can kill mold by soaking food in water with a little vitamin C in it. I'm going to try to soak coconut flour (and almond flour!) in water with vitamin C and then rinse thoroughly, but it may just end up a mess. I'll let you know my result.

<description>&#60;p&#62;Actually, I have bought coconut flour from different manufacturers and also tried hard to keep it fresh by freezing it in between uses, and I find that if used as the main flour in the recipe, the baked goods will go bad extraordinarily quickly - within a couple of days or so. And it's not just the way that bread will grow some mold on top, but the inside of the baked good will start to smell like moldy, mildewy towels. Quite yucky, and absolutely not salvageable of course. There is something about coconut flour that makes it mold very quickly when exposed to moisture so I can imagine buying a bag of not-so-fresh coconut flour would be particularly bad if any mold spores are already in the mix, if that makes sense. This has been a huge drawback to me for coconut flour - aside from the unusual, imperfect texture/taste in baking - so I tend to only add a couple of tablespoons of coconut flour to almond flour/alternative flour recipes to add some light and fluffiness without all the drawbacks. Also, I am very mold sensitive but I think that the high-fiber high-moisture quality can cause some serious GI issues with eating a lot of coconut flour-based items as well.

<description>&#60;p&#62;I have been buying almond flour from benefit your life...it works good in all the recipes.  I'm running out also, and was thinking about trying the honeywell because it was cheaper....however.....I think I know what the difference is. Benefit your life advertises as &#34;organic&#34; and honeywell does not.  Although Benefit your Life does not read organic on the label, the website describes it as so.  I've had communication with the owner of benefit your life concerning a different situation, and she seems very trustworthy. So I'm thinking I'll stick with the Benefit Your Life brand for almond flour.  As for the coconut flour, I bought some about 6 months ago from Nutsonline, and it's still in my frige.  Didn't use it yet...wondering if it's still good....have 3 bags....hate to throw it out.  Does anyone know if it's still good?
