<description>&#60;p&#62;The ener-g egg replacer is great. There are also many homemade ones that can be used if you don't have access to that one.  I use the water/oil/baking powder one the most:&#60;/p&#62;
&#60;p&#62;• 1 egg = 2 Tbsp. potato starch&#60;br /&#62;
• 1 egg = 1/4 cup mashed potatoes&#60;br /&#62;
• 1 egg = 1/4 cup canned pumpkin or squash&#60;br /&#62;
• 1 egg = 1/4 cup puréed prunes&#60;br /&#62;
• 1 egg = 2 Tbsp. water + 1 Tbsp. oil + 2 tsp. baking powder&#60;br /&#62;
• 1 egg = 1 Tbsp. ground flax seed simmered in 3 Tbsp. water&#60;br /&#62;
• 1 egg white = 1 Tbsp. plain agar powder dissolved in 1 Tbsp. water, whipped, chilled, and whipped again

<description>&#60;p&#62;Actually, her recipe still does have eggs in it.  I overlooked them the first couple of times.  I just baked them using the ener G Egg Replacer, and it worked great.  Let me know if you try it too.  Be sure to read Elana's section of the website, why almond flour, and use the right kind of almond flour for the best results.
