<description>&#60;p&#62;1) I have just read Elana's Almond Flour cookbook.  It strikes me that most of the cookie recipes (pages 98 - 110) do not use an egg.  I have been baking gluten-free for the past ten years but every cookie I have made still used an egg or an egg substitute.  Is there a reason that these almond flour based recipes do not need an egg?&#60;/p&#62;
&#60;p&#62;2) I decided long ago not to add any salt to any of my cookies.  Elana specifies Celtic Sea Salt and salt is in every cookie recipe.  Is salt an essential ingredient or is it optional?

<description>&#60;p&#62;I would try to use 2 whites per each whole egg called for in baking recipes.  It should provide the same amount of volume/structure.  Since you will be missing the fat from the yolk it may change the taste or texture slightly but you may not even notice it depending on the recipe.  If you do notice a difference, you might add a teaspoon or so of oil or melted butter to see if that gives you a more desirable product. &#60;/p&#62;
&#60;p&#62;I have used all whites in baking before- either to use them up after making something with yolks or back in the 90's fat-free days.  It was traditional baking and not grain-free like the recipes here but I remember it turning out successful recipes.

<description>&#60;p&#62;I recently found out that I have a severe intolerance to egg yolks, but - strangely - egg whites are fine. I am wondering what to substitute for the yolks when making Elena's recipes. &#60;/p&#62;
&#60;p&#62;I'd like to avoid using Ener-G egg replacer and flax. I've thought about using additional whites or oil, and/or applesauce or chia seed, but I'm not sure what makes sense or what quantities to try. &#60;/p&#62;

&#60;p&#62;I just came up with this recipe last night when I was craving brownies.  I can't tolerate too many eggs so I started with the &#60;a href=&#34;http://www.elanaspantry.com/honey-cake/&#34; rel=&#34;nofollow&#34;&#62;honey cake recipe&#60;/a&#62; and went from there.  Hope you like it!  &#60;/p&#62;
&#60;p&#62;Chocolate Banana Cake&#60;/p&#62;
&#60;p&#62;2 c. almond flour&#60;br /&#62;
1/2 c. natural cocoa powder&#60;br /&#62;
1/2 tsp. baking soda&#60;br /&#62;
1/2 tsp. salt&#60;br /&#62;
2 medium ripe bananas, mashed&#60;br /&#62;
1/4 c. honey (or agave)&#60;br /&#62;
1 egg&#60;/p&#62;
&#60;p&#62;Preheat oven to 350 and grease a 9&#34; cake pan.&#60;/p&#62;
&#60;p&#62;Mix dry ingredients in a bowl.  Mix wet ingredients in seperate bowl and then add to dry ingredients.&#60;/p&#62;
&#60;p&#62;Pour into prepared cake pan and bake for 25-30 min. or until toothpick comes out clean.

i just tried making the flax seed bread. however, am trying to figure out a replacement for the eggs. has anyone here cooked with psyllium seed husks before? I know from experience that they can act as a binder. but am not sure how to mix it in. The water will surely dissolve the psyllium seed husks (and when baked creates a nice crust), but the question is - how much psyllium seed husks to add? I am also not sure about the carbohydrate count added..can't find much on the internet about the carbohydrates in psyllium husks.&#60;/p&#62;
&#60;p&#62;do I add it in equal parts of the eggs? or do I just add 1/2?&#60;/p&#62;

My fave recipe in the book is the pear crisp and i've noticed on the second day (it uses grapeseed oil) the crisp is actually greasy with oil when you eat it. That's maybe the problem with grapeseed versus butter...though I do like the taste of it.

<description>&#60;p&#62;I don't have an egg allergy so I haven't tried this myself but I've read you can substitute mayonnaise for eggs, so why not vegenaise?  It has both fat and protein like an egg.  Depending on the recipe I read substituting anywhere from 1TBS to 3TBS per egg called for.  I know most egg substitutes call for 1/4c to replace 1 egg and juliahstewart above substituted tofu in that amount.  I've had mayonnaise cakes in my non-gluten-free past and they were moist and tasty.  (No weird aftertaste.)  I hadn't ever seen this substitute mentioned yet here in these forums so I thought I'd throw it in.  &#60;/p&#62;
&#60;p&#62;I don't know that I would try plain nutmilk as an egg substitute, at least in that recipe.  It would be too thin and wouldn't provide the right texture.

<description>&#60;p&#62;If I am correct, applesauce is the replacement for oil...not eggs.  I have been trying to use egg replacer as well as I am egg intolerant (among many other things).  It does not have the same consistency as eggs...but I am unsure how to change the recipe...

<description>&#60;p&#62;I'm allergic to egg yolks (though whites are OK) and used ener-G egg replacer for two of Elana's recipes and they didn't turn out well. The rosemary crackers were yummy, but extremely crumbly. The nutty bread didn't even really rise and was so dense I could have used it as a brick. Not sure what I'm doing wrong, as I followed directions on ener-g box, and didn't sub any other ingredients in Elana's recipes.  &#60;/p&#62;
&#60;p&#62;iceberg_ssj, can you enlighten me on what egg replacer you have used so successfully? And when you use the banana, is it 1/2 banana for each egg?&#60;/p&#62;

<description>&#60;p&#62;I just made Lemon Poppy Seed muffins. I actually doubled the recipe and made it in a cake pan. I replaced half the eggs with flax meal + water + arrowroot. They turned out great. &#60;/p&#62;

<description>&#60;p&#62;I tried the egg replacer &#38;#38; water amounts recommended for the Bread 2.0 recipe, and also applesauce.  Tried the simple bread w/your banana recommendation. &#60;/p&#62;
&#60;p&#62;The replacer does more to keep those structured and bread-like.  With the applesauce, I split up the recipe and baked it as muffins just in case...  Yummy but structurally not very sound.  (Kinda squashy.)&#60;/p&#62;
&#60;p&#62;Also, I don't want everything to be sweet.&#60;/p&#62;

<description>&#60;p&#62;I have used egg replacer quite a lot(I'm allergic to eggs). It works pretty much one to one with eggs in baking and a few other application. I have also found half a mashed up bannana works even better than egg replacer. I have heard you can use applesauce. I think both of these work because of the fruit pectin so you could probably use any fruit or store bought pectin as well.

&#60;p&#62;I did try various replacements in the CSA spinach recipe, and I don't really recommend flax seed goop for that.  (Very good for baked items, though.)  Just made the dish slimy.  Mashed potato &#38;#38; white bean worked well, but not if you really need to pick up individual slices.&#60;/p&#62;
&#60;p&#62;Anyhow, thanks again -- haven't tried chia yet, am nervous about all that fiber! -- all of these give me some more ideas to try.  I may also try to hybridize the spinach recipe w/a spinach-quinoa pie thing out of Deborah Page Johnson's Feel Good Food Guide.

<description>&#60;p&#62;I am new (as of today) and this is an old post but if anyone stumbles apon this, I have had excellent results with chia seeds as an egg replacement. I found a GF blog that wrote about using chia in their recipes but did not share any recipes or the ratios. Only that they used the vita mix to blend the chia with water to make a slurry before mixing into the recipes. They were also posting a web cook book, but I felt the kitchen scientist well up in me and I wanted to just experiment from that one hint. So I decided to translate it to the same ratios I have been using with ground flax seeds and water. 1 tablespoon of ground flax blended with 3 tablespoons of water = one egg. Replacing the eggs in recipes. I have made quick breads, muffins and cookie bars with excellent results. I have not tried a cake yet.
