<description>&#60;p&#62;1) I have just read Elana's Almond Flour cookbook.  It strikes me that most of the cookie recipes (pages 98 - 110) do not use an egg.  I have been baking gluten-free for the past ten years but every cookie I have made still used an egg or an egg substitute.  Is there a reason that these almond flour based recipes do not need an egg?&#60;/p&#62;
&#60;p&#62;2) I decided long ago not to add any salt to any of my cookies.  Elana specifies Celtic Sea Salt and salt is in every cookie recipe.  Is salt an essential ingredient or is it optional?

<description>&#60;p&#62;I recently found out that I have a severe intolerance to egg yolks, but - strangely - egg whites are fine. I am wondering what to substitute for the yolks when making Elena's recipes. &#60;/p&#62;
&#60;p&#62;I'd like to avoid using Ener-G egg replacer and flax. I've thought about using additional whites or oil, and/or applesauce or chia seed, but I'm not sure what makes sense or what quantities to try. &#60;/p&#62;

Of course it would not come together, so now I have the raw ingredients of coconut flour, mixed with scallions, grapeseed oil,salt and water. Any ideas what I could make with this -- it is totally dry and not yet cooked.

&#60;p&#62;I just came up with this recipe last night when I was craving brownies.  I can't tolerate too many eggs so I started with the &#60;a href=&#34;http://www.elanaspantry.com/honey-cake/&#34; rel=&#34;nofollow&#34;&#62;honey cake recipe&#60;/a&#62; and went from there.  Hope you like it!  &#60;/p&#62;
&#60;p&#62;Chocolate Banana Cake&#60;/p&#62;
&#60;p&#62;2 c. almond flour&#60;br /&#62;
1/2 c. natural cocoa powder&#60;br /&#62;
1/2 tsp. baking soda&#60;br /&#62;
1/2 tsp. salt&#60;br /&#62;
2 medium ripe bananas, mashed&#60;br /&#62;
1/4 c. honey (or agave)&#60;br /&#62;
1 egg&#60;/p&#62;
&#60;p&#62;Preheat oven to 350 and grease a 9&#34; cake pan.&#60;/p&#62;
&#60;p&#62;Mix dry ingredients in a bowl.  Mix wet ingredients in seperate bowl and then add to dry ingredients.&#60;/p&#62;
&#60;p&#62;Pour into prepared cake pan and bake for 25-30 min. or until toothpick comes out clean.
