I am new to this forum and in fact these types of diets. After suffering from coeliac disease for 3 years now, despite following a gluten free diet, I never felt 100%. Last week I decided to research my symptoms I still felt and stumbled across the SCD. Despite the fact that it's not quite the paleo diet, I have now been following it for 3 days and already the inflammation of my stomach has gone right down, along with symptoms of nausea and very dry skin. I have read many SCD success stories and seen enough reports to convince me that this will work for me. However, after learning about the paleo diet as well, I was wondering whether it is worth switching. I now only eat fruit, vegetables, fish, eggs, honey as a sweetener (and only occasionally) and hard cheese. I am finding it hard at the moment as I keep getting carbohydrate cravings and feel very tired! But I'm hoping these things will get better. I was just wondering if there are many differences between the SCD and paleo in terms of the effects on your body? Thanks!

&#60;p&#62;1/4 C. Buckwheat flour&#60;br /&#62;
1/4 C. Millet flour&#60;br /&#62;
1 Tbsp. Arrowroot powder&#60;br /&#62;
1/2 Tbsp. Hain Featherweight baking powder&#60;br /&#62;
Dash of salt&#60;br /&#62;
1/2 C. Water (or nut milk)&#60;br /&#62;
1 Tbsp. Agave nectar&#60;br /&#62;
1 Tbsp. Oil&#60;br /&#62;
Oil for pan/griddle &#60;/p&#62;
&#60;p&#62;Combine all the dry and mix thoroughly. Combine the wet and mix thoroughly. Add the wet to the dry and yep, mix thoroughly. Heat pan/griddle on medium and spoon on mixture. Cook 2 1/2 - 3 minutes then flip. Cook for another 2 minutes. Enjoy.

I just had a flare up so I am really trying hard to get on the right track long term.  I need to just bite the bullet and become gluten and dairy free.  I am from Southern Louisiana so I know and need amazing food.  Verde Chicken Enchiladas is what I need at the moment.  A recipe that mimics the creaminess and flavor with the almost burnt melted cheese on top, BUT it must be free of all things gluten and dairy.  Can someone help me with a recipe.  I am going on a brief chicken soup recovery diet so my insides can rest.  I want to start eating food again by using this whole cooked chicken and some of the broth from this soup in the enchiladas.  Any recipe suggestions out there?  Does anyone want to experiment with me?&#60;br /&#62;

No sugars of any kind, no dried fruits like dates or raisins, no honey, no agave.......you get the picture.  All I've been able to do is make up some sort of muffin recipe with rice flour, flax, mashed up banana, cinnamon, coconut oil and a sprinkle of stevia.  They're okay at best.  Any other ideas, or any recipes on this website you can recommend?

<description>&#60;p&#62;Buckwheat is well-tolerated by many.  It has a strong taste and absorbs a lot of moisture.  There is a light version of buckwheat that you can get online (ployes.com - Bouchard Family Farms) and I mix them together, 50-50, and it works well in recipes.  The lighter version has barely any taste, so it cuts the regular buckwheat and it doesn't absorb as much moisture - it's a nice balance in my opinion.  You may need to adjust your recipe a bit - trial and error.  Lots of recipes online to try - just google.

<description>&#60;p&#62;We are starting on a low carb diet, so are watching grains and sugar.  I made chili and since I couldn't make a bread, I decided to try these.  Here's how I changed it:  Instead of figs, I used 1/4 C glycerin and 1/4 tsp pure stevia.  Instead of sesame seeds, an extra 1/4 C of almond flour.  Instead of sunflower, pumpkin seeds.  Instead of raisins (to keep the carbs down) chopped cashews (although I think they may be a higher carb nut).  The only thing I would recommend is to spray the muffin liners be putting batter into them.  They stuck and the bottoms came apart.  I baked for 22 minutes and they were done perfectly.  My kids didn't like the added nuts etc, so I might try it without next time.

<description>&#60;p&#62;I am hypoglycemic -- require protein with meals &#38;amp; snacks, cannot have wheats or rice, and need complex starches rather than simple, avoid fructose. The substitute for all-purpose flour that I came up with is 4 parts blanched almond flour, 4 parts garbanzo (bean) and 1 part potato STARCH (not potato flour). I substitute this in regular cookie recipes, but it is heavy for cakes and yeast breads. I make quick breads (like banana) in shallower loaves. I also add about 1 tsp xanthan gum per cup of flour. Although bean flour does taste in raw batter, I do not notice a bean taste after baking. This flour saves me daily headaches, literally!

&#60;p&#62;I recently started excluding gluten from my diet too, so I am trying to find cookbooks as well.  I have the Flying Apron book and am going to make the Pumpkin Cookies recipe with some leftover puree that I used to make vegan/GF pumpkin scones yesterday.  I got that recipe from Susan O'Brien's &#34;The Gluten-Free Vegan,&#34; which has a lot of recipes that seem to be great.  The scones came out nice, by the way--they are not sweet or too dense, so they can be used to eat along with soup or other meals instead of regular bread.  Or you can heat them up and put a little Smart Balance spread on them (I get the soy-free version) with some fruit preserves for a treat.  &#60;/p&#62;
&#60;p&#62;I have been finding a lot of recipes online as well, beats buying tons of cookbooks, although I will be buying Elana's.  She seems to be pretty definitive on her baking skills from what I can gather from the recipes and blog entries posted.  &#60;/p&#62;
&#60;p&#62;I stopped eating gluten b/c months ago I did a 21-day cleanse and bloodwork prior to starting.  At the end, the doctor analyzed my bloodwork and said that while I was in primarily good health, my thyroid seems to be overstimulated and was producing a bit too much hormone, even though my body was compensating nicely for it.  This freaked me out and for months, I stuck my head in the sand about it, but recently decided to go in for some tests and take better care of myself.  A good friend who is a functional medicine practitioner told me to to get off of wheat, since that can be related autoimmune responses with the thyroid.  I took the plunge the next day and have to say that it's been a good experience so far two weeks in!  Needing to prepare my meals a lot more which isn't always easy but that helps me not to cheat either.&#60;/p&#62;
&#60;p&#62;You can check out the Gluten-Free Girl website as well, but lots of her recipes need to be adapted to be vegan as she eats meat and uses dairy sometimes.&#60;/p&#62;

&#60;p&#62;I have stocked up on apple sauce, kale chips, and my protein DIY shake packets (I use NOW eggwhite protein in single-serving ziplock bags). I will be making Elana's Rosemary Crackers and my very own beef jerky recipe in a couple days. <description>&#60;p&#62;I've travled a few times with a baby in tow who also eats as I do, grain and sugar free. What I've found works best is to bring a small cooler, the size of a purse. I like to bring hard boiled eggs, muffins or crackers, small container of roasted veggies, apple or pear sauce, and I like to make little mediterranean turkey meat balls though you don't eat meat. If you eat fish, you could do a fish cake of some sort.  I tend to bring enough for the flight and the first day of eating so if I cannot get to a good grocery store or restaurant, we won't go hungry. Nuts, cheese, yogurt, are other good options.

&#60;p&#62;I travel for work and have a lot of food restrictions, so I certainly understand the need to be well prepared!  I try to travel with nuts and a couple of avocados for trips, as well as a few gluten-free baked goods if I have the time.  I also travel with Justin's nut butter packets (&#60;a href=&#34;http://www.justinsnutbutter.com/)and&#34; rel=&#34;nofollow&#34;&#62;http://www.justinsnutbutter.com/)and&#60;/a&#62; either apples or vegetables for a quick power snack.  &#60;/p&#62;
&#60;p&#62;If you're going to NYC, you should be able to find a Whole Foods in any part of the city, and they'll have a ton of hot bar or salad bar options with ingredients listed so that you know what you can eat.  &#60;/p&#62;

&#60;p&#62;Later this month I am traveling from Melbourne to New York for a two-week trip to visit a close friend. As well as being very excited for my first trip to the US, I’ve also been thinking a lot about the logistics of traveling gluten-free, and in my case, also grain-free. I have only recently made these major eliminations to my diet (or, I prefer Elana’s terms, I have a new ‘meal plan’:)), so this will be a big change since my last trip. &#60;/p&#62;
&#60;p&#62;I thought this would be a great forum to get a discussion going: does anybody have any good tips that they have found useful while traveling with food restrictions? For my flight I have requested vegetarian gluten-free (I don’t do red meat either!), so it will be interesting to see what appears. I’ll also be sure to pack my own snacks: definitely some of Elana’s choc-chip cookies and granola:) &#60;/p&#62;
&#60;p&#62;Yet once I’ve arrived, that will be where the challenges set in. I have my trusty keep-cup (www.keepcup.com.au) for hot drinks and I think dried fruit and nuts will be staples. What have others found to be efficient ways of getting and transporting the food that you need whilst out and about? What do you find travels well and is fairly easy to come by? In particular, for those of you in the States, I was hoping for some recommendations for vegetable-friendly places (i.e. that are in most cities/suburbs) to get a quick lunch or snack whilst on the go; perhaps places which offer a good salad to-go? I have a feeling I’m going to miss my big bowl of greens to go with dinner. &#60;/p&#62;

&#60;p&#62;I'm a newbie...just joined last week.  I have been eating a mostly vegetarian, sometimes vegan diet for a few months now and have recently started to eat gluten-free as well.  I have an autoimmune disease (Graves') that causes IBS.  I've noticed recently in cutting out GF foods I feel much better.  &#60;/p&#62;
&#60;p&#62;Are any of you vegan and gluten-free cooks/bakers?  Can you recommend good blogs, websites, cookbooks, etc?  I found a GF &#38;amp; Vegan cookbook this morning: Flying Apron's Gluten-Free &#38;amp; Vegan Baking Book by Jennifer Katzinger.  I have yet to read it.&#60;/p&#62;

&#60;p&#62;How To Make Coconut Flour Bread&#60;br /&#62;
This is so drop dead simple, even the worst cooks can make this at home. It uses 4 ingredients, 2 of which are from coconuts.&#60;br /&#62;
6 eggs&#60;br /&#62;
1/2 cup melted coconut oil&#60;br /&#62;
1/2 teaspoon sea salt&#60;br /&#62;
3/4 cup coconut flour&#60;br /&#62;
Ideally you’d want to use pasture eggs from your local farmer rather than supermarket eggs because of the improved nutritional profile pasture eggs have. Do what you have to do though.&#60;br /&#62;
Mix all ingredients together and pour into a small bread pan wiped down with a little coconut oil.&#60;br /&#62;
Bake at 350 degrees for 40 minutes.&#60;br /&#62;
Empty the bread out onto a towel or plate and leave it to cool for a while. Lining the bread pan with a little coconut oil should make the job easier.&#60;br /&#62;
Because the bread is so dense, it doesn’t rise very high as you can see in the picture. When you prepare your bread pan with the oil, pay attention to the bottom portions of the pan.

<description>&#60;p&#62;Hi y'all!  &#60;/p&#62;
&#60;p&#62;I'm new to the forum and eating gluten-free.  I just started learning more about gluten-free baking, etc.  I have not been diagnosed with Celiac, but I do have an autoimmune disease that causes IBS.  I have been experimenting this week to see how my body responds when I eat regular foods (tortillas &#38;amp; tortilla chips at my favorite Mexican restaurant, etc.) versus gluten-free foods.  I have noticed a big difference and told my husband it's time to go GF.  &#60;/p&#62;
&#60;p&#62;I am also trying to stop drinking Dr. Pepper; it's addicting and way too available here in Texas.  ;)  I also think it causes some of my intestinal issues.  &#60;/p&#62;
&#60;p&#62;I plan to overhaul my pantry and get rid of anything not GF.  My family will benefit from this as well, though they may not like it at first.  However, they've done pretty good adjusting as I have learned more about health, wellness and nutrition and changed our lifestyle.  My husband has been a great sport and gone along with all of it, though not always right away.  ;)  &#60;/p&#62;

<description>&#60;p&#62;I have made a sesame seed butter cookie for years but always wanted one that was gluten free.  I followed Elana's recipe with a few minor changes.  I only used 1/4 cup of agave nectar and added 2 TBSP of palm sugar to get more of that brown sugar taste.  I also melted a couple tablespoons of butter and added that in as well.  I did use the toasted tahini like Elana recommended.  Last but not least I toasted 1 cup of sesame seeds in a nonstick crepe pan and put 1/2 cup into the dough and the other 1/2 I pretty much used up coating the dough balls.  They took the full 10 minutes to be browned nicely and I must say they turned out amazingly good.  They have a delicate crunch when you bite in but then they have a nice chewy texture at the same time.  I brought samples to my sister and she loved them as did a couple of her friends who dropped by while I was visiting.  These are a real hit -- thank you Elena!  My next feat will be to make a gluten free oatmeal, raisin, walnut cookie that has a similar texture -- love that delicate crunch and chewiness together.  I have the Bob's Red Mill gluten free old fashioned rolled oats and found a recipe using a flour made from them as well as some kept whole that looks promising.  Another day, another cookie to try!  How good to know that we can eat sweets in moderation that are high in protein, good fats, fiber and won't spike our blood sugar and are gluten free!  Yipee!

&#60;p&#62;Sweetened Condensed Coconut Milk:&#60;/p&#62;
&#60;p&#62;3 cups coconut milk (or other non-dairy milk)&#60;br /&#62;
1/2 cup organic sugar- or sweeten to taste with agave&#60;/p&#62;
&#60;p&#62;Stir ingredients together in a sauce pan and heat gently; cook slowly over low to almost medium heat, stirring constantly, until the volume is reduced to about 1 cup.&#60;/p&#62;
&#60;p&#62;Add some vanilla extract to taste, if you like; and a pinch of sea salt, if desired.&#60;/p&#62;
&#60;p&#62;Cool the condensed milk and refrigerate if not using right away.&#60;/p&#62;

I had a desire to make key lime pie as well. What I did was followed Elana's recipe for Lemon bars (substituted key lime for the lemon juice) which is found in her cookbook along with the marshmallow frosting for the&#34;meringue&#34;. It came out wonderful. Hope this will help.&#60;br /&#62;

&#60;p&#62;I used to make the Barefoot Contessa key lime pie all the time.  I have noticed that you have adapted some of her recipes.  Have you thought about a gluten/dairy free key lime pie?  The gluten and dairy free members of our household would love it.  I wouldn't know where to start, but if you don't have time, can you provide suggestions for experimenting with one of your other recipes?&#60;/p&#62;

<description>&#60;p&#62;Thanks so much for your encouraging reply.  I had blood work recently, and it was all excellent, including the thyroid. &#60;/p&#62;
&#60;p&#62;I think the answer lies in 3 components - doing the right amount of the right exercise consistently each week (sometimes I have trouble sleeping and fail to exercise), limiting my fruit, almond flour, honey (carb) intake, (I think I was eating more of these than I realized, and over time, it was sabotoging my efforts), good quality sleep of sufficient duration.  (Natural Calm was recently recommended to me on The Paleo Chix blog to help me sleep through the night.  I am waiting for my order to come in the mail).  My plan is to get all three of these components on track at the same time.&#60;/p&#62;
&#60;p&#62;Once I reach my ideal body weight, I can increase my carbs a little bit and maintain my weight.  &#60;/p&#62;
&#60;p&#62;I have tried food combining at times.  My concern with it relates to the surge of sugar in the bloodstream and the ensuing surge of insulin which causes excess to be stored as fat.  Thanks for the idea.  I value smart caring people who take the time to share their thoughts generously with me.&#60;/p&#62;
&#60;p&#62;This forum is part of the reason I have been able to be so disciplined with my diet.  I feel supported and part of something bigger than myself.&#60;/p&#62;
&#60;p&#62;Have you read The Primal Blueprint?  I don't agree with absolutely everything in it, but I highly recommend it.
