&#60;p&#62;I warning regarding &#34;grapeseed oil&#34; which is about 75% Polyunsaturated Fat, which can significantly inhibit the thyroid and digestive system. These fats are defense chemicals produced by the plant to ward off predators (us). They should consumed VERY moderately, if at all.&#60;/p&#62;
&#60;p&#62;Also, fats high in un-sat fats when heated become rancid and toxic to the body. &#60;/p&#62;
&#60;p&#62;Coconut oil, butter, and/or olive oil are best. In order of best to least best as olive oil also can breakdown in heat.&#60;/p&#62;

I cook a lot with cocnunt oil and prefer it over the grapeseed oil, which in my opinion is a bit too greasy and salty. Plus, I like the added health benefits of the coconut oil. Just wondering if anyone has tried using it...&#60;/p&#62;

<description>&#60;p&#62;Challenge, yes.  Also, perhaps, creative opportunity?  I've had to play with recipes always because of odd food intolerances/choices/diets over the years and it's been challenging but also really fun.   I would think about the flavor of tamari (salty, umami-ish) and see what Moroccan markets have that would sub for that.  Could you ferment beans?  Would a smoked paprika work sometimes? My other thought would be if there are any asian restaurants around to pump them for some or ask where they get it. Or international stores.  Good luck- this does sound like a challenge.  It reminds me of relatives who spent a year abroad when I was a kid and they brought a trunk of Heinz ketchup with them.

<description>&#60;p&#62;I have successfully used melted butter (usually goat butter but occasionally cow) for pretty much all of the baking recipes I've used on the site and from the cookbook.  I've substituted olive oil for many of the savory dishes. I use the same amounts or a small amount less.  I've also used Ghee, which I don't imagine you could get easily in Morocco.  I know Grapeseed is better for cooking at higher temps but I just find it cloying and oily in some recipes.

Also, good to know that I don't have to melt the butter. <description>&#60;p&#62;I would recommend using another type of oil (e.g., Coconut, Sunflower, or I have even used Olive Oil -- which I realize most don't recommend but I have never had issues with it in a punch) to achieve the most &#34;safe&#34; results (that is, if you are very worried about it turning out a little different from the recipe). Another option is to replace half of the grapeseed oil with applesauce, and then use half the amount of butter (not melted). I doubt very much that using melted or solid butter (a bit less than the required grapeseed oil) would cause any problems though. I have used butter in a pinch (usually room temperature, so it is malleable and stirs in well) with no problems. I tend to just guess or use tablespoons to measure.&#60;/p&#62;

there are times where i can taste the olive oil just slightly, such as the vegan chocolate frosting, but it imparts a slight sophistication to the deep chocolatey goodness.&#60;br /&#62;
i strongly recommend trying it.&#60;br /&#62;
also, i usually sub honey in for agave without a hitch.

I will try and get more on this, as I am not 100% sure of my info....As for celtic sea salt, I am pretty ignorant.  Is this considered more healthy than Himalayan sea salt?  I'm happy to switch, but so far the fine ground Himalayan seems to live up to it's press:  &#34;Ancient, beautiful, and mysterious, Himalayan salt is one of the most valued elements on Earth and hails from the valleys and rivers which lie deep within the Himalaya Mountain Range. &#60;p&#62;I've found measuring the agave nectar (I sometimes use honey) to be a pain in the neck, with it's stickiness and getting it all out of the measuring spoon.  What I tried this morning, and it worked beautifully, is this.  As I measured out the liquid ingredients, I measured the grapeseed oil first, dipped the measuring spoon in that, and then measured the honey. What a difference! <description>&#60;p&#62;I usually order NOW Grapeseed oil from LuckyVitamin.com or get it at Trader Joe's.  La Tourangelle has wonderful sesame oil, so I would expect the same quality in the grapeseed oil.  In my experience, olive oil can be substituted 1:1 for grapeseed oil in savory dishes and melted coconut oil for grapeseed oil in desserts.  Good luck with the cookbook.  My favorite recipe is for the chocolate chip scones with 1/4 cup dried cranberries and 1/2 cup unsweetened coconut flakes added.  Delish!

&#60;p&#62;The only thing is I live in a smaller town and the Grapeseed Oil brand I would like to get, Spectrum is no where to be found.  &#60;/p&#62;
&#60;p&#62;I have located in town:&#60;br /&#62;
La Tourangelle Grapeseed Oil&#60;br /&#62;
Sadaf Grapeseed Oil&#60;br /&#62;
and&#60;br /&#62;
Napa Valley Naturals Grapeseed Oil&#60;/p&#62;
&#60;p&#62;Has anyone tried any of these brands?&#60;/p&#62;
&#60;p&#62;I am thinking about trying butter instead this weekend and buying the brand I would prefer in 2 weeks when I go out of town hmmm&#60;/p&#62;
