I'm part of the annual "World Wide Vegan Bake Sale" and we are having a bake sale April 30th, 2011. CNN is doing a piece on it, as they did last year. They want to focus on original recipes. I would love to get Elana's permission to share her Vegan Chocolate Frosting recipe, with her credit. It's an amazing recipe!

Hi Lisa,

I recently started excluding gluten from my diet too, so I am trying to find cookbooks as well. I have the Flying Apron book and am going to make the Pumpkin Cookies recipe with some leftover puree that I used to make vegan/GF pumpkin scones yesterday. I got that recipe from Susan O'Brien's "The Gluten-Free Vegan," which has a lot of recipes that seem to be great. The scones came out nice, by the way--they are not sweet or too dense, so they can be used to eat along with soup or other meals instead of regular bread. Or you can heat them up and put a little Smart Balance spread on them (I get the soy-free version) with some fruit preserves for a treat.

I have been finding a lot of recipes online as well, beats buying tons of cookbooks, although I will be buying Elana's. She seems to be pretty definitive on her baking skills from what I can gather from the recipes and blog entries posted.

I stopped eating gluten b/c months ago I did a 21-day cleanse and bloodwork prior to starting. At the end, the doctor analyzed my bloodwork and said that while I was in primarily good health, my thyroid seems to be overstimulated and was producing a bit too much hormone, even though my body was compensating nicely for it. This freaked me out and for months, I stuck my head in the sand about it, but recently decided to go in for some tests and take better care of myself. A good friend who is a functional medicine practitioner told me to to get off of wheat, since that can be related autoimmune responses with the thyroid. I took the plunge the next day and have to say that it's been a good experience so far two weeks in! Needing to prepare my meals a lot more which isn't always easy but that helps me not to cheat either.

You can check out the Gluten-Free Girl website as well, but lots of her recipes need to be adapted to be vegan as she eats meat and uses dairy sometimes.

Please post any other cookbooks you find here, I will check the thread! Thanks and Happy Holidays!

I am also a newer gluten-free vegan (well, trying; not so good at the vegan sometimes). My newest and favorite resource is the book, Clean Food, by Terry Walters. It is not a specific gluten-free cookbook, but the author's daughter has gluten intolerance, so most of the recipes are GF. And quite simple and pretty delicious, from what I've tried so far. If only I would have found this book a while back, I think it's all I would have needed. Well, that and this website!

Hello!

I have a few gluten-free vegan breakfast ideas on my website: http://gfbff.com/category/breakfast

While I use eggs in my recipes, a simple replacement of ener-G egg replacer does the trick and every recipe I've converted "vegan" turned out splendidly.

I also have a vegan protein shake I like to start the day with. http://gfbff.com/beverages/vegan-protein-shake

Good luck on your vegan and gluten-free journey!

I am looking for new ideas for a vegan, GF breakfast...main dishes are great for dinner and I often will have leftovers for lunch. But breakfast is harder for some reason. Any suggestions/favorites?

For baking I highly recommend the book "Babycakes" its the recipe book from a NYC vegan, gluten free and mostly sugar free bakery in NYC. The book contains everything from savory veggie muffins to decadent cakes.

Also Veganomicon is a great vegan cookbook and although not all the recipies are gluten free they specify which ones are.

I am a vegan too and have gluten allergies. Well I usually try recipes from the Free Gluten Free Recipes website. You should look for "Vegetarian Main Dishes" section. It have tried most these recipes some of them are pretty easy to make.

Hello all!

I'm a newbie...just joined last week. I have been eating a mostly vegetarian, sometimes vegan diet for a few months now and have recently started to eat gluten-free as well. I have an autoimmune disease (Graves') that causes IBS. I've noticed recently in cutting out GF foods I feel much better.

Are any of you vegan and gluten-free cooks/bakers? Can you recommend good blogs, websites, cookbooks, etc? I found a GF & Vegan cookbook this morning: Flying Apron's Gluten-Free & Vegan Baking Book by Jennifer Katzinger. I have yet to read it.

Any advice is greatly appreciated.

Blessings,

I adapted Elana's banana blueberry muffin recipe with stuff I had around the pantry. Thought I'd share!

BANANA COCONUT CHOCOLATE CHIP MUFFINS
(Gluten-free, dairy-free, naturally sweetened)

3 cups blanched almond flour
1/4 tsp salt
1 1/2 tsp baking soda
1/2 tbs cinnamon
1 packet stevia
2 cups overly ripe, mashed bananas
3 eggs
2 tbs grapeseed oil
1/2 cup flaked coconut
1/2 cup very dark chocolate chips

Preheat the oven to 350 and prepare 12 muffin cups. Combine the first four dry ingredients in a large bowl. In another bowl, combine the bananas, eggs, and grapeseed oil thoroughly. Add the wet ingredients into the almond flour mixture and mix until completely combined. Then, mix in the coconut and chocolate chips. Divide the batter into the muffin cups (I used an ice cream scoop.) Bake for 25-30 minutes, or until the tops are puffy and golden brown. Let cool in the pan for a little while before you take them out.

We are changing over to the SCD with no starch, no baking powder, no flax, no agar. I could use extra pumpkin in this recipe to get it done without eggs. Thanks.

The ener-g egg replacer is great. There are also many homemade ones that can be used if you don't have access to that one. I use the water/oil/baking powder one the most:

• 1 egg = 2 Tbsp. potato starch
• 1 egg = 1/4 cup mashed potatoes
• 1 egg = 1/4 cup canned pumpkin or squash
• 1 egg = 1/4 cup puréed prunes
• 1 egg = 2 Tbsp. water + 1 Tbsp. oil + 2 tsp. baking powder
• 1 egg = 1 Tbsp. ground flax seed simmered in 3 Tbsp. water
• 1 egg white = 1 Tbsp. plain agar powder dissolved in 1 Tbsp. water, whipped, chilled, and whipped again

Actually, her recipe still does have eggs in it. I overlooked them the first couple of times. I just baked them using the ener G Egg Replacer, and it worked great. Let me know if you try it too. Be sure to read Elana's section of the website, why almond flour, and use the right kind of almond flour for the best results.
