<description>&#60;p&#62;hey guys,&#60;br /&#62;
i just tried making the flax seed bread. however, am trying to figure out a replacement for the eggs. has anyone here cooked with psyllium seed husks before? I know from experience that they can act as a binder. but am not sure how to mix it in. The water will surely dissolve the psyllium seed husks (and when baked creates a nice crust), but the question is - how much psyllium seed husks to add? I am also not sure about the carbohydrate count added..can't find much on the internet about the carbohydrates in psyllium husks.&#60;/p&#62;
&#60;p&#62;do I add it in equal parts of the eggs? or do I just add 1/2?&#60;/p&#62;

&#60;p&#62;I did try various replacements in the CSA spinach recipe, and I don't really recommend flax seed goop for that.  (Very good for baked items, though.)  Just made the dish slimy.  Mashed potato &#38;#38; white bean worked well, but not if you really need to pick up individual slices.&#60;/p&#62;
&#60;p&#62;Anyhow, thanks again -- haven't tried chia yet, am nervous about all that fiber! -- all of these give me some more ideas to try.  I may also try to hybridize the spinach recipe w/a spinach-quinoa pie thing out of Deborah Page Johnson's Feel Good Food Guide.

<description>&#60;p&#62;I am new (as of today) and this is an old post but if anyone stumbles apon this, I have had excellent results with chia seeds as an egg replacement. I found a GF blog that wrote about using chia in their recipes but did not share any recipes or the ratios. Only that they used the vita mix to blend the chia with water to make a slurry before mixing into the recipes. They were also posting a web cook book, but I felt the kitchen scientist well up in me and I wanted to just experiment from that one hint. So I decided to translate it to the same ratios I have been using with ground flax seeds and water. 1 tablespoon of ground flax blended with 3 tablespoons of water = one egg. Replacing the eggs in recipes. I have made quick breads, muffins and cookie bars with excellent results. I have not tried a cake yet.

– watch when replacing more than three in one recipe&#60;br /&#62;
		1/2  banana&#60;br /&#62;
		1 Tablespoon ground flax seed plus 1 T. Hot Water plus 1 T. Arrowroot&#60;br /&#62;
		2 T. potato starch&#60;br /&#62;
		1 T. agar dissolved in 1 T. water, whipped, chilled, and whipped again&#60;br /&#62;
		1/8 cup pureed tofu
