I am in heaven! This book (and almond flour) is amazing. I've made some crackers, some biscuits ( wow! have I missed biscuits!), waiting for a proper sized pan for the Scrumptious Sandwich Bread. It is soooo amazing to be able to eat baked goods without an allergic reaction!

Extra bonus for me is how filling these products are. One or two satisfies completely, instead of going on a binge, as is triggered for me by other grains - not unusual for allergies, I'm told.

I'm loving this book! I did try the Scrumptious Sandwich Bread recipe and found it to be really dense with the almond butter. I'm going to try the one off the website. The cheddar cracker recipe is great! I did modify one thing and that was leaving the crackers on the baking sheets in the oven (turned off) overnight. This made them REALLY crispy in the morning! I highly recommend this. I'm going to try these slightly thicker and cutting them out with cookie cutters for hors d'oevres. Lots of room for variation here! The dog loves them, too. :)

I just tried another great recipe in the book--for Scrumptious Sandwich Bread, which uses almond butter. This is a wonderful bread recipe!

In referece to the cookbook, I have enjoyed making the Pecan Shortbread Cookies, the Lemon Bars are wonderful! The crust reminds me of an actual graham cracker crust. I also made the biscuits. All the recipes I have tried are wonderful! I was so excited when I got my almond flour, that I made the fried chicken along with 2 batches of the lemon bars. Everthing is delicious!

Last night I added cheddar cheese, garlic powder an egg and omitted the agave for some Cheddar Biscuits they turned out wonderful! My whole family loves them!

I got the Honeyville brand as per her suggestion in the book. The flavor of the scones were excellent, they just didn't hold up. I might try whipping the egg whites to soft peaks for structure. Thanks for the suggestions!

Ligea, I can't help with altitude, but I have received pointers from others on the forum about mixing the eggs 4 to 5 minutes (until very frothy) before adding other wet ingredients to them. I find it has helped the texture of my baked goods to do this.

About the book, I have just made a almond flour chocolate cake from the book, and I love it! I have spent over a week baking items from the book, and still, I haven't made anything that wasn't really great!

So I ran out and got the book and waited impatiently for my almond flour. I live in Boulder and figured that the recipes would not need altitude adjustments since Elana lives here as well - I was wrong! I made the chocolate chip scones this morning (following the recipe to the letter) and knew instantly the thin batter would spread and it did -- i've got pancake-like scones and not at all what I was hoping for.

Anyone else tried these recipes at altitude? I have no idea how to fix them unless just adding more almond flour will do the trick?

Any help would be appreciated - I'm an avid gluten-free baker, but new to almond flour as the sole flour in a recipe.

I recieved the box yesterday, it looks so lovely! I read it completely before sleeping yesterday and hurried out of bed this saturday morning to get into the kitchen. Lemon bars are in the oven right now and look and smell amazing! I also have salmon and dill in my fridge, so ready to make salmon-dill burgers tonight...
I have loved many recipes on the blog and am absolutely amazed by the amount of other great and creative recipes in the book. I have many family members and friends who have celiac as well or just enjoy healthy and delicious cooking and eating. This book is my christmas gift to them this year. Do yourself a favour and get the book, I'd say!

Thanks Lillian for reminding me that I should review the book at amazon. I just posted a 5 star review there. Now she has three of them. Though this part is off-topic, it relates to what I said in a previous post about the book. I am learning that the latest coconut flour cake I made was better the next day, so maybe I gave up on the texture of these cakes before I had given them a chance.

The first item I made from the cookbook was the Salmon Dill Burgers. It's funny really because before I began trying these recipes, I thought to myself, "I want something to satisfy my taste since I can't have normal food," but after eating these Salmon Dill Burgers, I thought, "This is normal food!" The Sesame Crackers and the Pecan Shortbread Cookies are equally normal (aka terrific)! I have not been disappointed with any of the recipes I have tried from the book. Everyone should buy it, and I am not just being overly positive as I have made a couple of recipes from the website that don't please me like these did. I am not complaining because it's a free site, and basically, I am learning my tastes and preferences, and I now know that coconut flour recipes in cakes aren't my thing. Fortunately, the book is all about using almond flour. Yum!

Wanted to tell Elanna, I'm sure your know already, but, for next edition of book, I'm sure there will be several. On page 116, recipe for Raspberry bars states "Based on a recipe from joy of cooking, ....though my vegan version..... However, there is an egg in the recipe. Thank you for all the vegan recipes you did provide.

I rushed out and bought THE book today (hot off the press) and it looks fabulous! I've been having a great time experimenting with alternative flours and almond flour is one of my favorites. Up to now, I've been grinding my own almonds but, as luck would have it, I received my first bag of the Honeyville Almond Flour in the mail today! It is certainly a finer grind than I ever achieved on my own, so I can't wait to see the difference in my recipes.

Thank you for your wonderful recipes and blog. I look forward to whatever delicious creations come out of your kitchen in the future. Congrats on the book and keep up the good work!
