<description>&#60;p&#62;What a great idea making the syrup.  I have been using palm sugar instead of agave as well...like in Elana's &#34;tapioca&#34; I used 2 tbsp instead of the agave.  I like to sweeten our yogurt with it as well.  We made frozen yogurt this summer with a qt of whole, plain yogurt, 1/4 cup palm sugar and chopped up fruit/berries of your choice.  It's a tart yogurt but very refreshing.  We froze it in the cuisinart ice cream maker.&#60;/p&#62;
&#60;p&#62;I like the syrup idea because some of the recipes using coconut flour need that liquid...this is perfect.  Thanks so much!

<description>&#60;p&#62;Coconut Palm Sugar Syrup&#60;/p&#62;
&#60;p&#62;Capture the caramelized, butterscotch flavor of coconut palm sugar for a simple treat next time you make pancakes or waffles.  This also works as a sweetening boost to your favorite cocktail!&#60;/p&#62;
&#60;p&#62;    * 1 ½ cups palm sugar&#60;br /&#62;
    * ½ cup water.&#60;/p&#62;
&#60;p&#62;1. To make the syrup, bring the coconut palm  sugar and water to a boil in a medium-size saucepan over medium heat, stirring to dissolve the sugar. Stop stirring and reduce the heat to low.  Simmer for 3 minutes.  Keep warm if to be used immediately.  Or, let it cool and keep refrigerated to use later on.&#60;/p&#62;
&#60;p&#62;I made this and used it in place of the agave . WOrked BEAUTIFULLY!!!

<description>&#60;p&#62;I know that Elana uses agave nectar as a sweetner but I prefer palm sugar or coconut sugar as it is sometimes referred to.  It is a whole sweetner non processed sweetner and it registers as about a 35 on the glycemic scale - you use it the same as you would sugar.  Does anyone know what the substitutions are if you want to use another sweetner besides agave in Elana'a recipes?
