    I have never used Arrowroot Powder. I was wondering if anyone could enlighten me to it's uses and effects on baked goods. It's in Elana's latest recipe - the chocolate biscotti.

    I am also interested in arrowroot.Can tapioca or cornstarch be substituted?

    Hi Lynn! If you go to http://www.morethanalive.com/Arrowroot-powder, it will give you info. on arrowroot. That is the site Elana uses to et her arrowroot powder (which is also arrowroot flour).
    Also, in the back of a cookbook I have, 2 teaspoons of arrowroot=1 TABLEspoon of cornstarch..(or 2 TABLEspoons of wheat flour, if you ever need to substitute for that in a recipe).
    Arrowroot and cornstarch are usually interchangeable as they both are thickeners and don't have distinctive tastes.

    Hi Marcia! Yes, cornstarch and arrowroot are usually interchangeable.
    2 tsp. arrowroot=1 TABLEspoon cornstarch.
    I got that from the back of a cookbook I have.
