It is my day for questions! Wondering what kind of loaf pan other than aluminum works well with the almond flour? ( I also like coconut flour). I have been looking at stoneware? Any advice would be welcomed! Thanks, Ellen

I've used glass, stoneware and non stick coated. They all work fine with both flours. The time might have to be adjusted for each but that is not a big deal. Just watch it closer and jot it down on the recipe for next time. HTH

I watched an episode of Test Kitchen on t.v. and they went with Baker's Secret. I have one and I like mine best. It's the right colour as it doesn't burn or under cook.

Ellen I did not buy the Magic Loaf pan either b/c of the aluminum. I purchased a commercial grade basic stainless steel loaf pan as similarly sized to the magic loaf pan as I could find. I haven't baked with it yet as I'm waiting its arrival from Amazon. I have made bread in a stoneware loaf pan before and I wouldn't recommend it, for it to get completely done parts of it were overcooked. If you ever watch the Foodnetwork you'll also notice that a lot of chefs use the standard commercial grade stainless steel cook and bakeware most of the time.

I use an old shiny stainless steel loaf pan (I think it was my husband's grandmother's) for all of the bread recipes, and it works great.

I wonder how it would be to use the aluminum Magic Loaf pan and line it with parchment paper?
