Can anyone suggest what tests they found to be helpful and effective in determining an infant's food sensitivities? My grandson has already had an ER visit due to severe case of hives after a few sips of mommy's fruit smoothie. The clerk who prepared it in the store didn't know casein was a dairy derivative. Baby is already on gluten and dairy free diet. Now my daughter is scared, and wants help in knowing what he is and is not sensitive to prior to introducing new foods. Thanks for any suggestions.

Either go to an allergist that specializes in food allergies, or find a natural practitioner that will do nutritional testing with you and be very thorough. The needle tests at a regular allergist's aren't always that good at detecting the mild sensitivities. If you are going dairy and gluten free though, and it sounds like casein too, then your best bet is to just educate yourselves. You're not likely to get an exhaustive list of every food out there that could cause a problem. You're going to have to read labels and start cooking everything from scratch to be totally sure.
