I've just discovered Elana's delightful cookbook and took a crack at the cinnamon/apple muffins. They're wonderfully tasty - but burnt at the bottom (despite sticking to the recommended oven temp. of 350F. I have a gas oven and used silicone muffin pans - do I need to notch down the temperature (and if so what?) or leave them in shorter (33min)?

yeah mine always burn when i use the silicone muffin liners. using paper liners and being sure the oven rack is up a little higher from the bottom yields perfect results.
remember that coconut flour and almond flour tend to burn a little easier than wheat flour, so the baked goods need a little "gentler" heat.

I have a silicone mini muffin pan and found that if I put it on a regular baking sheet during baking I didn't have the burning problem.
