My Mom and I made these chocolate candies for Easter with Elana's Chocolate Frosting recipe.
Make the frosting as directed only do not freeze it. I did put it in the fridge for about 5 minutes just to make it less runny, but still liquid.
Combine
1 cup shredded coconut
1 cup chopped toasted almonds
1/2 cup agave
2 tsp of vanilla
The result should be a sticky mixture
Use muffin liners and tin and drop a spoon of frosting in the bottom of each and then spoon the coconut mixture next and finish it off with another spoon of frosting to cover it.
Put in the fridge or freezer until it forms into candies.
I only used one muffin tin and after I filled all of the cups I placed them on a cookie sheet so they were nice and tight together. I did leave a few of them in the muffin tin as I got to the end...the ones on the cookie sheet set up a lot nicer then the ones left in the tin. I used a standard size muffin...minis would probably work even better =) Hope you enjoy! Meagan
