    Hi Elana,

    Can you use So Delicious refrigerated coconut milk in place of the can milk in your recipes that call for coconut milk?

    Hi Karen,

    I haven't tried that brand since if I recall correctly it may have some gums in it which I avoid.

    Maybe someone else here in the forums can chime in.

    Hi Elana and Karen! So Delicious coconut milk beverages are my favorite dairy-free alternative to milk. They are meant to be drinkable and used as a substitute in most any recipe that calls for cow's milk, soy, milk, or rice milk, etc. It is especially delicious in hot cocoa, chai tea, and for baking. Coconut milk that comes in a can is richer and thicker, and is much higher in fat and calories. It is not meant to be drinkable, but rather, it is used for its very strong flavor, high fat, and creaminess in Thai and other Asian-inspired recipes. More often than not, I would say that you cannot substitute one for the other.

    Hi Elana,

    You are right, it does has guar gum. I had neglected to notice this. I just purchased the coconut milk you suggest in a can and will use this in my recipes from now on. Btw, have you ever experimented with the light version of this coconut milk in your recipes? I am not sure if it is worth it, but I thought I would ask.

    Also, can I ask what kind of milk you use for drinks and gluten free cereal? I have recently given up soy milk, but do not really like the taste of rice milk.

    Any suggestions you have would be very welcome. :)

    Karen,

    If you can tolerate almonds, you might try almond milk. There are many versions and flavors, sweetened and unsweetened. It works in most recipes, too. Just make sure you use plain, not vanilla, when making vegetable dishes, like mashed potatoes!

    I've never used coconut milk before and would really like brand recommendations. Some brands have a higher fat content than others. I did learn that you dilute a can with enough water to make a quart and in that way it can be drinkable, but should I assume that to make ice cream, for example, that I should use the higher fat brand? I need to start somewhere. Thanks

    Yup, whenever I am recommending coconut milk in my recipes it is the high fat type found in the can. I generally use the Thai Kitchen brand. Do not use lite!
