Hello all,
I'm making Elana's coffee cake recipe from the cook book. This is the second time I've made it and I'm having the same problem. The middle takes forever to set. Last time I made it, I baked it 10+ minutes longer and it ended up dry. I'm following the recipe pretty closely, except for using veg oil instead of grapeseed. Anyone else out there with a similar issue?

Coffee Cake not baking evenly

Hi there,
I did make the coffee cake recipe from Elana's book recently (I used melted butter that day as I had no grapeseed oil on hand), but everything worked really well. Hmmm.. . are you sure your oven is heating evenly--oven temperature heats accurately, etc?

Thanks. I think I could take it out of the oven earlier. It looks like it isn't set but as it cools it gets a little better (I ended up leaving it in 40 min).
I'll definitely use melted butter in the future. Otherwise, I think the oven temperature should be working well. Thanks for the comment!Posted 1 year ago # -
I also cooked the coffee cake today and was confused when it indicated to sprinkle the topping over the batter, when it was a liquid. So I just spread it over the batter. Also the batter was thick so I just spread it into the pan. Was this the same for y’all? It was dry but OK. I guess I cooked it too long.

I remember the batter for this cake being very thick as well (almost like a dough), and I spread the topping over the batter before baking--everything turned out really well for me--not dry... . I can't remember exactly how long I baked it, but I followed Elana's instructions in the book, and I definitely did not exceed her recommended baking time for this recipe. My oven doesn't run super hot, so for some recipes (mainly the cookies) I have to exceed her recommended baking time a bit. But for the coffee cake, breads, cupcakes and muffins, I just follow Elana's instructions and everything always works out really beautifully.
