Fresh Salas and Pitas?

    Any good fresh salsa recipes, I look on Elana's list and didn't see any?

    I was thinking Roma tomatoes have lots of flavor and cilantro for starters, but not sure of a ratio, maybe 2 pounds of tomatoes to 1 bunch of cilantro?

    Secondly, I wasn't sure which would have the best flavor would Buckwheat, Amaranth or Quinoa make good Gluten Free Pitas, personally I need something Yeast Free, also?

    I don't have a good recipe for either, so thanks for any tips. :)

    Hi,

    Here is my own recipe for Salsa, family loves it. We are from Arizona so we like it spicy, if you remove the seeds and white membrane from inside your chilis it will be milder.

    8-10 roma tomatoes chopped
    1/2 white onion chopped
    1 can diced green chili
    1 jalapeno diced small
    1 tsp garlic
    1 tsp cumin
    1/3-1/2 cup chopped cilantro
    1 can (14 oz) diced tomatoes

    Place all in a food processor and pulse until wanted consistency.
