So I normally try to stay away from oats but I owed cookies to a co-worker and their favorite was Oatmeal Raisin cookies. In case anyone else is interested and eats oats, I made Elana's Snickerdoodle recipe from her cookbook but added 2/3 cup of GF certified rolled oats, 1/2 to 2/3 cup raisins and 1/2 teaspoon (or more) cinnamon. (sorry....didn't measure any of that so the ingredients are estimations. :) )
I baked them following the directions in the cookbook and I have to say....they were DELICIOUS! I plan to try just the Snickerdoodle recipe at some point. :) Enjoy!
