Gluten Free Diet ??

    Hi, I'm new here, I was just told by my Dr. to try going gluten free for 2 weeks, and no milk, (casein? or whey), potatoes, broccoli, cauliflower,or beans. I already eat no red meat and heavy in fruits and veggies, what else is there? I eat chicken, fish, pork ect.

    If you cut out all grains and anything that comes in a can, bag, or box, you will be safe. Gluten is found in wheat, oats, rye, and barley, but it is also hidden in many other foods. Read ingredients carefully, and you can have some convenience foods, but if you need the quick version, eat anything in its natural state, and stay away from grains. Natural food stores now have a large selection of gluten free foods, which is a big change from when I was diagnosed 15 years ago! The recipes on this site are a great place to start, as they are all gluten free.

    How is it going on the diet? It's such an huge adjustment, but it gets easier with time. I love Elana's recipes. I also have recipes on my website that you could have. They are gluten-free & casein-free with the exception of a few that use goat cheese.

    Please make sure you are following up on your vitamins and minerals panels -- avoiding that many foods can lead to deficiencies.
    As for Gluten free foods, there are so many gluten free products, here are some great grains and such to get you started:
    quinoa
    teff
    buckwheat
    and the 'standards'
    rice
    corn

    One thing to watch for when buying oats (oatmeal) even in the natural selection at the grocery is look for the gluten free oats. I have run into that before and was quite ill. Also watch for anything that says "modified." Typically means there is some sort of thickner added to it, which could be a gluten.
