does anyone know of a recipe for grain free pumpkin pancakes? all the ones i have found contain potato starches, buckwheat, or rice flour. i just know there is a way to make them with coconut flour or almond or flax meal!!

The Spunky Coconut has a recipe for grain free pumpkin pancakes on her website: http://www.thespunkycoconut.com/ It does use buckwheat, which she says is not a grain but a seed. Depending on your food restrictions, if any, this might be a good recipe for you, though I haven't tried it so can't vouch for it yet...want to try it though as it sounds yummy! It's in her "pancakes/waffles" section on the right side of her blog. Hope that helps!

About.com's Low Carb and Gluten-free cooking websites have one at http://lowcarbdiets.about.com/od/breakfast1/r/pumpkinpancakes.htm which uses pecans ground up for the flour. They are good. You can replace the sweetener with sugar or honey, etc if you prefer. I would expect that almond meal would work as well as pecan, but I have not tried it.

i saw the spunky coconut recipe, but do not use buckwheat :(
