Homemade Coconut Milk (for strawberry vanilla ice cream)

    I went to Trader Joe's today and found that they have a company wide shortage of coconut milk. It is the only brand that I've found that doesn't add guar gum or preservatives. The brands at Walmart, Publix, and Whole Foods have guar gum. the brands at my local asian market have preservatives, but no guar gum.

    I went to Whole Foods, and bought 3 young, peeled coconuts and am making my own coconut milk in the vitamix. One half coconut plus 1/2 to 1 cup water blended in the Vitamix gives you coconut milk. Most cans that I found have about 2 cups of coconut milk, so adjust your recipes accordingly.

    If you don't add the water, and have good luck liquifying the coconut meat, what you end up with is coconut cream. You can sweeten it, add flavorings to it, and use it as a topping on fruit, desserts, or in your coffee.

    It is a good idea to make your coconut milk right before you make your ice cream, so it is fresh, and you only have to clean your vitamix once, not twice!

    Use your milk or cream within two days stored in the refrigerator, or freeze it in measured out portions for future use.

    It sounds great! Wish I had a vitamix.

    However, to be cost effective it makes sense to just buy coconut milk, esp for someone like me who uses it in my coffee everyday, pouring on scrambled eggs, as well as in Thai curry dishes. The coconut milk from Thailand which sells for $.99 used in restaurants doesn't contain guar gum. Only the coconut milk that westerners drink sold at health food stores contains guar gum (as well as the ice cream) to give it a milky consistency. Guar gum is fairly safe and may be some digestive/cholesterol benefits as well so no need to freak out over it.

    Most Coconut milk from Thailand only contains potassium metabisulphate which some people have an allergy to. This preservative is present in all wine so if you are allergic to wine you might get sick from it. I like this coconut milk better because its fat content is closer to 19% and its really creamy. The TJ's coconut milk is watered down because people are freaking out about saturated fat (even though it is the medium chained 'good' sat. fat)

    However, I did find a coconut milk at food4less (kroger) for $.88 with no preservatives (!) sold under the brand GOLDEN STAR. It's not the best tasting, but it works for Thai cooking -- don't know about ice cream. I have been on a coconut milk binge the last 3 weeks and have tried every brand available in Los Angeles. I think POLAR (purchased at Ralphs for $1.25) is the bomb!! so good, I want to drink it all by itself.

    I did not have good luck making my own coconut milk. I gave up and called Trader Joe's. They got in more, so I bought a case of it. Yesterday, we gave my husband an ice cream freezer and made Elana's strawberry vanilla ice cream. It turned out great.
