    Hello all,

    I just discovered this site and feel grateful for it!
    I am getting married in two months in Boulder, CO, and would love to eat my own wedding cake. Any ideas on someone who we could hire to create a delicious almond-flour cake?

    I made a gluten free wedding cake while back using Wise Choice Cake-ability Baking Aid by Expert Foods. You use nut flour instead of wheat flour. (Disclaimer: I am not associated with this company in any way - just like their products.)

    Hi Jenny! I live in Colorado Springs, and we have a well-established bakery who special orders Gluten-Free cakes from a dedicated GF bakery. They produce wonderful regular cakes and are picky about quality. I bet they could work with you in creating a GF wedding cake, or maybe provide information about the bakery they work with. We also have a local Gluten-Free bakery. They specialize in breads and cookies but may also work with cakes (not really sure).     Hi Jenny, This response is probably late, but I thought I'd throw the idea out there in case someone else had the same question. My sister is getting married in a few months, and she just found out that she was allergic to gluten. The gluten-FILLED cake has already been ordered. We came up with the idea that I would make her a special smaller cake (6" round) on a cute cake stand that will sit at the couple's table. Not only will it give her a chance to have cake on her wedding day, but it makes a really cute table decoration in the meantime.
