Now that Christmas is coming I want to make some home-made candy. My daughter cannot tolerate the dagoba chocolate, and I pretty much use honey for everything now (agave is too expensive and not sure it is healthy....) so I was wondering if anyone has made candy using unsweetened chocolate and honey (or agave). TIA for any help you can give.

I have done it! it is relatively simple, just make sure you add some kind of fat to the chocolate as you are melting it (i like coconut oil best) or else it gets a somewhat chalky texture. I use agave rather than honey because i like the milder taste, but i'm sure if agave works honey would too. good luck!
