Matzo Balls - Too Dry

    I tried making Elana's kneidlach exactly as her recipe instructs but found them to be too dry and a bit crumbly. What would you recommend I do to correct this? Might the addition of xanthum gum be a good solution or would there be a better approach?

    Our restrictions are Celiac based, but I also want to keep the recipe dairy-free for kashrut purposes.
