    I found Elana's site in searching for agave nectar recipes on Recipezaar. Everything looks so mouthwatering and delicious but both my kids have nut allergies so I can't use almond flour. Any suggestion for substitutions? All purpose flour? Spelt? Whole wheat? I realize most of, if not all Elana's recipes are GF, but I'm diabetic and agave nectar recipe's are hard to come by!

    Hi missjoy,
    I am a Certified Nutritional Therapy Practitioner. Are you familiar with rice flour?
    Or Coconut flour? There are special tricks to using the rice flour in recipes, adding binders to it, etc. Elana's recipes are fantastic, you could probably substitute spelt for the almond flour if gluten is not an issue. As you are diabetic, you may want to rethink the agave nectar usage, and read up on the current "health fraud" drama that's been going on.
