I've tried making the recipe for pancakes a few times from Elana's cookbook with very mixed results. They took forever to cook and still seemed too moist, and were hard to flip. They tasted great, however, so I want to keep trying. I am using the Honeyville almond flour. Any suggestions?

Thanks, this was helpful. I think the cast iron made a difference as well as the wait time.
