    I am SUPER new to this GFCF thing and I need some help. I went to Whole Foods today and purchased some very basic stuff that I saw in the cookbook. I ordered the Coconut Flour and Almond Flour from the places recommended in the back of the book. Can anyone help with what else to have? I have Grapeseed Oil and Agave.

    Hi Gracee,
    It sounds like you're well on your way to figuring out gfcf living. I've been gf for about 10 months now, and it was certainly overwhelming to start with.
    Elana's recipes are great because they use such a small selection of ingredients so you don't need to stock your pantry with ingredients you won't be using on a regular basis.
    I don't know very much about the cf diet, so some of my staples may not be appropriate...but here are the things I try to keep stocked in my pantry:
    Arrowroot powder, xanthan gum, tapioca starch, potato starch, applesauce, quinoa flakes (which sometimes work as a substitute for oats), sorghum flour, buckwheat flour and teff flour.
    I definitely kept my pantry simple when I was starting out, but have been trying new ingredients and experimenting more lately. I do try to plan ahead a bit so that I use up the ingredients I have before buying another type of flour, that way I can use things up before they go off and I don't have heaps of half-finished jars of flour sitting around.

    Iam also new to Cf since June 2009. i weighed 208 lbs in Sept i had lost 20 lbs and in Nov I had lost another 10 lbs. My Dr. said many people do lose weight when going CF.

    Iwould suggest that you join two groups at yahoo. They are GFCF and GFCFrecipes.
    they have helped me alot.

    I now use SILK Soy milk. I use EARTH BALANCE in the sticks for margarine. Idont use cheese, and even though i loved cheese i dont miss it. Itried soy cheese, and spit it out in the sink. LOL

    The first bread i tried from Whole Foods was Ezekiel bread its really good toasted. If
    you buy it be sure to keep it in the fridg or it will sprout.

    If you have a HY-VEE store close to you they carry alot GFCF products.
