Purple Velvet Torte

    I don't have a food processor yet... but would like to try this recipe - since the beets and agave will be put in a blender is it really important that you shread them to cook first? I do have a mini chopper which would probably mince them first, or perhaps slice thin then as they cook mash them a bit?

    Unless you can really get the beets very smooth, the cake will not have the incredible velvety mouth feel. It comes out almost like a custard. I had to bake it an extra 30 minutes. You might try a hand blender which costs a lot less than a processor, takes up less space in the kitchen. You can use it to puree soups right in the pot.

    I chopped the beets and cooked them in the syrup then used a blender to puree the mixture.... I suspect my amount of beets and syrup may have been wrong as it's taking double the cooking time as well - but my condo smells like chocolate so it's all good so far!
