Question about coconut flour recipes

    I tried some of the coconut flour recipes on Elana's website, including the cherry-pecan loaf and the zucchini muffins. They browned up faster than they were done baking on the inside. I was really excited about using coconut flour because it is cheaper than lots of other alternative flours out there and it has some great benefits. Any ideas why my recipes could be turning out this way?

    It sounds like your oven may run hot. I would reduce the temperature of your oven at least 25 degrees (maybe more but start with that) and then watch the time, you may need to add a few extra minutes. Although the cranberry pecan bread will brown quite a bit anyway due to the agave but the other recipes shouldn't brown quite that much and then be undone in the middle.

    recipes using coconut flour turn out very browned but not burned. here's a photo of cranberry walnut bread made with coconut flour.
