    Elana and Friends -
    My mother is in love with Rainbow Cookies like the ones you see here: http://habeasbrulee.com/2008/01/14/rainbow-cookies/
    It's her birthday this weekend and I've been trying to convert this to gluten free, dairy free. Any suggestions would be so helpful!

    Around Passover time, you can find Rainbow cookies that are Kosher-for-Passover and Gluten Free and Dairy Free. The ones that I had for seder were from a market in Toronto.
