Scones!!!

    So I just made the Chocolate chip scones yesterday and after cooking them they flattened out and are now like fluffy cookies. They still taste good but just dont look right. I am not sure what I did wrong. My friend said hers turned out that way as well. Any suggestion?

    I made them recently, and they worked really well--not sure how you made them, but I dropped the dough for the scones in scant 1/4 cup measurements directly on the baking sheet, and did not flatten or adjust them before baking, and they came out just right. Are you using blanched almond flour, or coarse almond meal? The blanched flour (I like the Honeyville) works beautifully, but I know that--with Elana's recipes--the coarse almond meal yields different results. Hope this helps!

    My daughter, 13, made these this morning. We didn't have walnut oil so she used coconut oil and OMG they were awesome. They were buttery melt in your mouth and we are huge scone fans. I thought our scone days were over but alas there is Elana's cookbook.

  4. I have been baking for years and one thing I can tell you is that if your kitchen is too hot, the batter gets too hot and spreads, and the product does not turn out like it should. I have made these scones several times and I love them. They always turn out great, and do not flatten out. I use a big cookie scoop and plop them on the cookie sheet. Do not flatten them out prior to baking. Also, make sure your cookie sheets are cold. If they are warm, they will also cause the batter to flatten out. Hope that helps:)

    I had the same thing happen to me! One day my scones came out very flat. Turns out my problem was that I added too much grapeseed oil. I just ended up calling them "Blueberry Lemon Muffin Tops" instead of "Blueberry Lemon Scones".

    An extra tablespoon of almond flour can help avoid the scones flattening out when cooking. Good luck!
