    I made tortilla-like wraps out of mung beans, following the instructions given in the blog link below. I liked them a lot.

    Also, masa harina (corn that is soaked in lime - the mineral not the fruit - and then ground to a fine powder) which is the main ingredient for corn tortillas is naturally gluten free. You can find it in the hispanic foods section. On the bag there are instructions (basically you just add water).

    If you can tolerate grains, and are interested in sourdough, I've developed a really good sourdough-millet flatbread.

    You can cook these for less time, and they'll turn out like thin injera; or you can use less batter, make them even thinner, and cook them longer, and then you get big crispy tortilla/flatbreads, that are delicious with a bit of hard cheese melted on them. http://www.lifeisapalindrome.com/recipes/gluten-free-sourdough-teff-flatbread . It's amazing how well the gf flours hold together once they've been fermented--hardly any crumbling!

    I just found this recipe if you eat grains. It sounds pretty easy.

    Alternative Flour Tortillas

    by Jean Duane, Alternative Cook

    1 cup brown rice flour
    1/2 cup sorghum flour
    1/2 cup tapioca flour
    1 tsp. baking powder
    2 tsp. xanthan gum
    1 tsp. salt
    1 cup warm water
    3 TBS sunflower or olive oil

    1. Whisk together the flours, baking power, salt and xanthan gum. Separately mix water, and oil together, then add to the flour mixture. Mix with hands or a pastry whisk until incorporated. Oil hands and form dough into 8 golf balls.
    2. Place plastic wrap over the bottom of a tortilla press and put a ball of dough on the plastic wrap. Place another piece of plastic wrap on top of the dough, and slowly press the tortilla with the press until it is flattened. (Or, roll the dough out on waxed paper with an oiled rolling pin.)
    3. Heat an oiled cast iron pan or griddle and place the tortilla on it. Press it while it is cooking. When browned, turn and cook the other side. Place in a tortilla warmer until ready to serve.

    Fresh and Easy Corn Tortillas

    2 cups masa harina (Corn flour)
    1 1/4 c. warm water

    Mix masa flour slowly with warm water until dough holds together well. Divide dough into 12 equal pieces, and shape each into a small ball.
    Dip two clean cloths in water and wring dry. Flatten a ball of dough slightly and place between the cloths. Roll with a rolling pin until dough is about 6 inches in diameter.
    Heat a griddle to medium-high heat while you cook the corn tortillas.
    Pull back cloths slowly, and trim tortilla dough to a round shape. Stack tortillas between sheets of wax paper.
    Peel off top piece of waxed paper carefully. Turn over tortilla, paper side up, onto a preheated, ungreased medium-hot griddle. As tortilla starts to warm, the remaining paper should peel right off.
    Cook for about 2 minutes, turning frequently, until tortilla looks dry. They are now ready.
