    My name is CJ Schimpf. I am a continuing education teacher at a technical college in Washington. I am have put together a gluten free class together that runs once a week for 4 weeks. I am looking to see if you might have any information I can use in my class to help teach people about gluten. I have some recipes I am going to show them and give them a packet of recipes, as I myself have learned to cook and bake gluten free foods. I am not gluten intolerant but many of the higher ups at this school are, as I was going through the culinary and the baking programs I had the task of making gluten free products handed to me. I have done some research and I feel there is so much more to learn. Any help or anything you would be willing to send my way will be helpful. Thank you.
